When people hear that an olive oil has “low acidity”, it's easy to assume this means it tastes less acidic or sour. It doesn't.

Free fatty acidity is a laboratory measurement that tells us something about the condition of the olives and how they were handled before and during production. For extra virgin olive oil, the legal limit is 0.8%.

But acidity isn't a flavour measurement. You cannot taste free fatty acidity.

It's one piece of the quality puzzle, which is why professional assessment and laboratory analysis both matter.

Lightly blanch them until tender, then finish with extra virgin olive oil, flaky sea salt, and toasted almonds for a dish that's fresh, vibrant, and full of texture.

Seasonal eating is often about restraint rather than excess.

Long before olive oil reaches your kitchen, an entire growing season has already unfolded.

Spring flowering, summer fruit development, autumn harvest, careful pressing, filtration, bottling, and finally the journey to the UK.

Each step influences what ends up in your glass bottle.

When you pour olive oil, you're tasting months of care condensed into a single ingredient.

Simple cooking lets seasonal ingredients do what they do best.

Sometimes the most memorable dishes are the ones with the fewest ingredients.

The Mediterranean approach to food has never been about complicated recipes. It's about letting good ingredients shine.

Ripe tomatoes, crisp cucumber, fresh herbs, creamy feta, and a generous drizzle of extra virgin olive oil create a salad that's vibrant, satisfying, and full of flavour.

Olive oil doesn't just sit on top. It brings the ingredients together, softens acidity, carries aromas, and adds a richness that makes every bite feel complete.

When the produce is fresh, simplicity becomes a luxury.
