Looking for some inspo? Try Alex's go-to recipe that his Mum made all the time when he was growing up - a yummy hearty Lentil & Veggie soup π π
INGREDIENTS
2 tbsp Extra Virgin Olive Oil*
1 medium brown onion, chopped finely
2 sticks celery, chopped coarsely
2 medium carrots, chopped coarsely
1 clove garlic, crushed
1 cup Organic Red Split Lentils*
4 cups stock, made with Organic Vegetable Stock Powder*
Note: My Mum adds chopped bacon, but I prefer to add some of our Organic Baconβish Vegan Flavouring* to add that meaty note.

METHOD
1. Heat oil in large saucepan. Cook onion, celery, carrots and garlic over high heat until softened.
2. Add lentils then stock and bring to boil. Reduce heat and simmer uncovered for 15 minutes or until vegetables and lentils are tender. Season to taste with salt and pepper.
3. Serve with bread if desired & enjoy!
