What a privilege to get to come and try (some) of the best offerings from this seasons' Taco Wars, Organised by the mighty (available for weddings, birthdays and Bah Mitzvahs) and hosted by the impressively stocked BBQ heaven that is .

Finally got to meet several devout Believers and welcomed some new into our little fermented hot sauce cult, I mean Movement...😬

Left feeling inspired and scratching my patchy little chinbeard; contemplating maybe having a go the next time Taco War breaks out...

You know how we all have a raclette grill lying around, gathering dust and only used once or twice a year?

Well, to try and solve this day to day problem and make more use out of it I've been thinking up some alternative uses, we've already made dessert brownies, this time I went for tacos (heating the tortillas on top and reheat the chicken thigh whilst melting some cheese under the grill.

We then made 'Smores' with marshmallows caramelised on (clean) paddles then carefully tipped and sandwiched between 2 chocolate digestives.

My kid loves an interactive meal like this (crispy duck pancakes, tacos etc) and making their own dessert too made it all the more memorable.

For some reason they passed on the hot sauce, but that is still a work in progress...

What will I come up with next..?

Feel free to suggest any -safe- ideas to cook on a table top grill (with a sort of 'plancha') on top in the comments, keeping in mind I don't have high velocity extractor fans overhead, so its more for melting stuff rather than frying on the top section or any serious cooking!

Today we are back where we started with Markets - Danson House Feb 2022 was our very first market.

Many other sauce / chilli producers have come and gone in those 4 years but we remain a regular feature and are always pleased to see so many returning, familiar faces.

The biggest compliment we hear quite frequently at Danson is how people have come specifically to stock up on our sauces, the relief on their faces when they see we are here is palpable and helps us feel like its all worth it, even on the quietest days.

Re: us being a bit quiet on Social Media, I'm doing my best at reducing the time wasted doom scrolling and so I've not been engaging as much; but we are absolutely still 'business as usual' and we aren't going anywhere!
-And I'm still absorbing all increased costs of everything as long as I possibly can to keep supplying not only the best tasting but the best value (insert 'craft/artisinal' type buzzword here) Hot sauce around.

I know! Hero right??

*Record Scratch* yeah, thats me, you're probably wondering how I got here...

After me and the kid being up and down with whatever deadly virus is going round this time; the week ends with the sudden realisation that today is 4 years since we first launched our webshop and became "live" as a business.
But I haven't done anything special, so here is a picture of me, just about made it out the other side, unshaven and holding the very first bottle I filled of Ferm Believers hot sauce. Batch 0000001.
Original Sin of course, which I will keep forever like the 'lucky first dollar'.
"I used to have a sauce business you know" I will say, staring down an empty bottle of whatever bland, heatless, mass produced crap they try and pass off as hot sauce in the supermarket.
And everyone else will just roll their eyes because its the 5673rd time I've said it.

But anyway, for now I still very much do have a hot sauce business and our webstore is STILL open, thankfully, and whilst 100x more reliable it's still just as awkward to navigate, but thats the price you pay (well, and the shipping fee (but I still lose money on that))
to fill your cupboards, fridges, worktops with the best sauces around. Arguably.

(Look, bracket within a bracket and Oxford commas all in one sentence!)

Anyway, what I really wanted to say is thanks for all of your support and by that, I mean your money ..but the kind words are also appreciated and let's find out if anyone actually read this far down.

Yeah, because what I want to do after a brilliant but exhausting 3 day Market is cook 😅 but the chickens' date was today and I've got the leftover sample bottles of Sauce on hand.

So chucked on the Memphis rub, stuck in the oven in a dutch pot, cashed up, bedtime stories for kiddo, didn't think to cook anything else but now super excited to just demolish a roast chicken caveman style -( but with sauce) after I've been talking about them non stop for 22 hours out of the last 72!

Anyway, I'm glad I made this small effort for a greater reward

If it was me I wouldn't have any left to sell!

Made it a very special bday indeed.

Outrageously tasty, as was the bavette (for the family 😆) as usual.

Don't worry, I let them try the Ribeye too ( I'm not a monster ) , and my kid apparently has very distinguished/expensive taste 😅

Don't forget stocks their very own, Exclusive (even I don't have any stock!) Special, one-off, Birthday hot sauce featuring gooseberries from Tim's allotment and orange habaneros from my garden!

Its a medium-hot heat, bright orange colour and still in stock at Waterintobeer in , . 1 minute walk from Brockley train station.

Not to mention a carefully curated choice of craft beers from the UK and around the world and everything you need to make your own beer and other ferments.

They also operate as a bar and events venue so dont sleep on one of the most chilled Joints in London.
