MCT Oil is suitable for cooking at low to moderate temperatures. MCT oil has a lower smoke point than coconut oil, which is 350Β°F. Any temperature above 320Β°F begins to harm the fats, reducing the effectiveness of MCT oil.πŸ§‘β€πŸ³

Ingredients
βœ”οΈ4 very ripe bananas
βœ”οΈ4 eggs
βœ”οΈ1/2 cup of coconut flour
βœ”οΈ1/2 cup of almond butter
βœ”οΈ4 tbsp True MCT
βœ”οΈ1 tbsp True Collagen
βœ”οΈ1 tbsp vanilla extract
βœ”οΈ1 tsp cinnamon
βœ”οΈ1 tsp bicarbonate of soda
βœ”οΈ1 tsp of gluten-free baking powder
βœ”οΈPinch of salt
βœ”οΈDark choc chips and chopped walnuts for topping (optional)

Method:
βœ”οΈPreheat oven to 160C.
βœ”οΈMix the coconut flour, collagen, cinnamon, bicarb, baking powder and salt.
βœ”οΈPeel and mash the bananas in a large bowl.
βœ”οΈAdd the beaten eggs, almond butter, MCT, and vanilla extract and mix well.
βœ”οΈGently fold the dry ingredients into the wet, a little at a time, until incorporated. Pour cake batter into a greased and lined loaf tin.
βœ”οΈTop with choc chips/nuts if using.
βœ”οΈBake for 30mins or until cake is cooked through and feels springy to the touch. Leave to cool before slicing.
