🫙 Why August Is the Perfect Time to Start Pickling

If you’ve ever thought about making your own pickles, now is the perfect time.

August and September are when Britain’s fruit and veg are at their best—cucumbers, carrots, beetroot, peppers, chillies, onions and radishes are all in season. It’s the ideal moment to capture late summer flavour and enjoy it for weeks to come.

Pickling isn’t just about preserving food… it’s about creating incredible flavour.

Vinegar, salt and a little sugar transform vegetables into something crisp, tangy and packed with character. Perfect with burgers, grilled meats, cheese, sandwiches, salads… and even a cold beer. 🍺

🫙 What is pickling?

A simple mix of vinegar, water, salt and sugar that preserves fruit and veg. Easy, quick, and great for seasonal produce. A great way to get more nutrients into your diet.

🌿 What can you pickle? - anything!

🥒 Cucumbers • 🧅 Onions • 🥕 Carrots • 🌸 Radishes • 🌶 Chillies • 🫑 Peppers • 🌿 Beetroot • 🫛 Green beans • 🥬 Cauliflower • 🍄 Mushrooms • 🧄 Garlic • 🍏 Apples

🥒 Quick pickle basics

• 250ml vinegar + 250ml water + 1 tbsp salt + 1 tbsp sugar
• Heat until dissolved (optional)
• Pour over prepared veg in a sterilised jar
• Refrigerate

Ready in 24 hours, best after 2–3 days.

✨ Add flavour with peppercorns, mustard seeds, dill, garlic, chilli flakes & more.

💡 Top tips

✔️ Use fresh produce
✔️ Sterilise jars
✔️ Keep everything submerged
✔️ Store in the fridge (2–4 weeks)

🌱 Why not give it a go this weekend?

Pick up seasonal produce at Brook Green Market and try making your own pickles at home.

What’s the most unusual thing you’ve ever pickled? 👇

🐟 Are You Eating Enough Fish?

Fish is one of the most nutritious foods you can eat, packed with high-quality protein, vitamins, minerals and heart-healthy Omega-3 fats.

The NHS recommends eating at least two portions of fish every week, including one portion of oily fish such as mackerel, sardines, trout or salmon.

But freshness matters…

Our fishmonger, Fresh & Wild Fish, specialises in keeping the time between the fish being caught and arriving at the market as short as possible, because the fresher the fish, the better the flavour, texture and eating quality.

In 2019, a BBC investigation into supermarket fish found that 30% of the fresh fish fillets tested had deteriorated beyond acceptable eating quality, some were believed to be up to 20 days old from catch to purchase, and a further 20% needed to be eaten the following day.

If you’re buying whole fish, look for:
🐟 Bright, clear eyes
✨ Shiny skin
💪 Firm flesh
🌊 A fresh sea smell, never a strong fishy odour
❤️ Bright red gills

One of the best things about shopping at a farmers’ market is that you can ask your fishmonger exactly what’s at its best that week and how to cook it.

Fresh fish doesn’t need much…

Just great ingredients, a hot pan and maybe a squeeze of lemon. 🍋

🌈 Eat the Rainbow. Eat More Colours.

One of the simplest ways to eat better isn't following the latest diet. It's simply eating a wider variety of fruit and vegetables, and as many different colours as possible.

Why? Because different colours contain different vitamins, minerals and beneficial plant compounds, so the more variety you eat, the more your body benefits.

❤️ Red tomatoes are rich in lycopene.
🟠 Orange carrots are packed with beta-carotene.
🟣 Purple carrots contain anthocyanins.
💚 Green vegetables provide nutrients such as folate and vitamin K.

Another great habit is to eat with the seasons.

As different fruit and vegetables come into season throughout the year, your diet naturally becomes more varied, exposing you to a wider range of nutrients while also enjoying produce at its freshest and most flavourful.

🌱 This July, some of the best British seasonal produce includes:
🍒 Cherries • 🍓 Strawberries • 🫐 Gooseberries • 🍅 Tomatoes • 🥒 Cucumbers • 🥕 Carrots (including beautiful purple varieties) • 🫛 Broad beans, peas & mangetout • 🥒 Courgettes • 🍆 Aubergines • 🥔 New potatoes • 🌶️ Runner beans • 🌿 Fennel, rocket, watercress and fresh herbs.

That's exactly what you'll find at Brook Green Market.

Our five specialist fruit & veg traders bring all the seasonal favourites, alongside exciting discoveries such as agretti, red vein sorrel, baby celery leaves, heritage tomatoes, purple carrots and so much more. Whether you're shopping for the week or looking to try something completely new, our growers are always happy to share cooking tips and inspiration.

🥕 This Saturday, why not challenge yourself to take home one fruit or vegetable you've never tried before? You might just discover a new favourite.

Supporting local growers means eating fresher, discovering more variety and helping independent food producers continue doing what they do best.

We'd love to see you this Saturday!
