The base for a Karai curry will always include onion, garlic, tomato, green pepper and green chilli. Also essential is ginger paste, and these will all be fried together in ghee or mustard oil until sizzling and smoky, at which point your protein can be added. The final touch is a ladle or two of 'mother sauce' to make the gravy. Find our own mother sauce method in our online recipe pages.
