Monkfish with Brown Shrimp & Gribiche-Style Dressing 🐟✨

A perfect centrepiece for Good Friday or the Easter weekend.

Ingredients
• Jarvis monkfish tail
• Brown shrimp
• Butter
• Olives
• Capers
• Cornichons
• Parsley
• Olive oil

Method
1. Pan-roast the monkfish until golden and firm.
2. Mix olives, cornichons, parsley & olive oil for a sharp dressing.
3. Brown the butter, add shrimp & capers.
4. Spoon the dressing onto a plate, top with monkfish.
5. Finish with the brown shrimp butter.

Rich, sharp, and full of flavour.

Clementine & Gin-Cured Salmon 🍊🐟

Curing salmon at home is easier than you think — and the flavour is incredible.

Ingredients
• Fresh side of salmon from Jarvis
• Sea salt
• Sugar
• Clementine zest
• A splash of gin
• Black pepper

Method
1. Mix salt, sugar, clementine zest, gin and pepper.
2. Lay the salmon skin-side down and rub the cure all over.
3. Wrap tightly and chill for 24–48 hours.
4. Rinse, slice thinly, and serve.

Bright, fragrant, and perfect for brunch boards.
