🐟 FRESH RED MULLET IN TODAY! 🐟

Beautiful fresh Red Mullet on the counter today at Thompsons Seafood.

A proper Mediterranean favourite — delicate, slightly sweet and full of flavour. Red mullet is best kept simple and is absolutely fantastic cooked whole. 👌

🇬🇷 Easy Mediterranean Baked Red Mullet

You’ll need:
• Whole red mullet, cleaned & scaled
• Cherry tomatoes
• Sliced garlic
• Lemon
• Olive oil
• Oregano or parsley
• Salt & black pepper

To cook:
Place the fish in a baking dish with the tomatoes and garlic. Drizzle generously with olive oil, season and add a good squeeze of lemon.

Bake at 200°C for around 15–20 minutes, depending on the size of the fish.

Finish with fresh parsley, another squeeze of lemon and serve with crusty bread or a simple Greek salad. 🍋🫒

🔥 Simple BBQ Red Snapper Recipe
• Lightly drizzle with olive oil.
• Season with sea salt, cracked black pepper, garlic and a squeeze of lemon.
• Add a few sprigs of fresh thyme or rosemary.
• BBQ over a medium heat for around 4–5 minutes per side (depending on thickness) until the flesh flakes easily.
• Finish with a k**b of butter and serve with grilled vegetables, new potatoes or a fresh summer salad.

Straight from the crystal-clear waters of Sri Lanka, this beautiful hand line caught Pink Striped Snapper is as sustainable as it is delicious. With its delicate, sweet flavour and firm, flaky texture, it’s perfect for a special midweek meal or weekend feast.

🌶️ Sri Lankan Coconut Snapper Curry

Ingredients:

* 2 Pink Striped Snapper fillets
* 1 onion, finely sliced
* 2 cloves garlic, crushed
* 1 tsp grated ginger
* 1 tbsp Sri Lankan curry powder
* ½ tsp turmeric
* 200ml coconut milk
* Juice of ½ lime
* Fresh coriander to serve

Method:

1. Gently fry the onion, garlic and ginger until softened.
2. Stir in the curry powder and turmeric, cooking for 1 minute until fragrant.
3. Add the coconut milk and simmer for 5 minutes.
4. Place the snapper fillets into the sauce and cook gently for 6–8 minutes until the fish flakes easily.
5. Finish with a squeeze of fresh lime and coriander. Serve with steamed basmati rice and warm naan or roti.
