Award winning 4th generation poultry farmer Charlie Frederick’s dry plucked by hand, game hung, bronze turkeys from only 30 miles to native breed dry aged fore ribs. Don’t forget our famous pork pies from father and son duo hand made on the Sussex coast. 🌭🌭🌭UK National Sausage Week 2025! We’re proud to hand make our award winning sausages each and every week! Carefully butchering whole free range sides of from Jimmy and Alister Butler on the Suffolk coast into delicious sausages. We make around 15 flavours always on a rotating menu each week. From our classic butcher’s sausages, pork and wild garlic to wild fallow venison, pork and red wine and plenty of sumptuous options in between.

We visited our amazing award winning turkey farmer Charlie in Harlow, Essex. We’ve been working with him and his family since we started 13 years ago. His passion, commitment, care and attention is remarkable for a 30 year old young farmer. It’s a pleasure to support young farmers in the industry. Our Christmas order books are now open and all the information is on our website. We’ve managed to keep our free range whole bronze turkeys the same price as last year too!!!!

Our popular winter dish faggots. Made with venison this week but sometimes pork mince, liver and a mix of woody herbs like thyme and sage. Carefully wrapped in caul fat and a single fresh sage leaf to top it off. Traditionally a dish popluar in Wales and the Midlands. Also called savoury ducks in Gods county Yorkshire and Lancashire. Lovely served with gravy, peas and mash!

This week is our last delivery for the hogget season. We’ve worked with John and Dan exclusively in the Otter Valley for about 8 years or so. We’re lucky to have struck up a brilliant relationship supporting this truly wonderful breed the unique looking Hebridean. We receive a delivery each fortnight from Easter until mid September each year. The flavour of the older animal shines through and the lush grass pasture of the rolling Blackdown hills. Cutting the farm down the middle is the beautiful gentle River Otter which was mentioned in the Domesday book and famous for its wild breeding population of Eurasian beavers the only river in England to contain them not to mention the fantastic wild brown trout. They’ve graced the menus of .john.restaurant .london
