What a crowd, what an atmosphere!

Viral smashed potato + flaky salmon = dinner of the year 😍🥔🐟 Tried it yet? Save this for your next meal and tag someone who would LOVE this!

Ingredients
•1 bag of Jack’s baby potatoes
•10 tbsp olive oil
•Pinch sea salt
•2 fillets salmon
•2 tbsp balsamic vinegar
•1 tbsp Jack’s honey
•Half the juice of a lemon
•1 pack of Jack’s green beans
•½ Jack’s red onion
•Handful of black olives
•Parmesan

Method
1.Preheat oven to 180°C.
2.Clean and boil your baby potatoes till they are soft enough to poke with a fork.
3.Drain and transfer to a lined baking tray and drizzle with 5tbsp olive oil.
4.Smash down using the bottom of a glass and sprinkle with sea salt.
5.Bake for 30 minutes till golden brown.
6. Cut the ends off the green beans, then in half.
7. Add them to your smashed potatoes then bake in the oven for a further 15 minutes.
8. In a pan add 1tbsp olive oil and begin searing your salmon skin side down.
9. Sear till crispy on all sides then leave to rest.
10. In a separate bowl add 4 tbsp olive oil, 2 tbsp balsamic vinegar, 1 tbsp honey and half the juice of a lemon.
11. To serve, add a layer of your smash potatoes and green beans. Then top with your salmon fillet, thinly sliced red onions and black olives.
12. Drizzle your salad sauce over, then top with a sprinkle of parmesan.
