Graceburn - the perfect cheese for a heat wave.

This marinated persian style feta is softer than a greek style, and preserved in Kentish Rapeseed Oil, Garlic and Thyme. Best served with good bread (or straight from the jar).

Have you tried… Single Gloucester?

The Cooper’s Hill Cheese-Rolling is an annual, dangerous tradition in Brockworth, near Gloucester, typically held on the Spring Bank Holiday Monday in May. Participants chase a wheel of Gloucester cheese down a near-vertical, 200-yard hill, often resulting in dramatic tumbles, bruises, and broken bones, with winners taking home the cheese! Traditionally the cheese chased is a Double Gloucester, Single Gloucester is it’s slightly harder to find sister cheese.

This classic Single Gloucester cheese is hand produced in the heart of the Cotswolds by the Weaver family. The makers have joined forces with the Gloucestershire Wildlife Trust to make an Organic Single Gloucester cheese using Gloucester cattle that graze the Trust’s Greystones Farm Nature Reserve.

The cheese has a natural, dove grey rind which brings a lovely earthiness to the cheese. With a light crumble and clean finish, the cheese has a very moreish quality, with notes of warm milk and almonds. The lighter, zestier cousin of Double Gloucester, the cheese was designed to be enjoyed locally in Gloucester (while the Double Gloucester would be sold at market to be enjoyed further afield), with history of the cheeses being made dating back to the 16th Century.

Single Gloucester is one of only a handful of cheeses in the UK with a PDO (Protected Designated Origin), which stipulates that it must be made in Gloucestershire and the milk must predominantly come from the rare breed Gloucester Cow. There are one of only five producers in the world to make this particular cheese, and the Weavers are one of the most local makers to our Cheese Maturing Rooms in Bourton on the Water - a stones throw away from the nature reserve!

We have been absolutely entranced with cheese carving ahead of her installation at Jermyn Street as part of next week. Intrigued by the cheese she’s carving…? It’s a pretty unique cheese named after a 9th Century Ethiopian Goatherder, and the father of coffee…

Kaldi is the result of a special partnership between RAVE Coffee and Paxton & Whitfield, celebrating two beloved flavours, coffee, and cheese. The cheese’s name is inspired by the legend of Kaldi, the young goat herder who discovered coffee centuries ago. It combines the fruity notes of RAVE’s responsibly sourced coffee beans with the fresh, nutty flavours of this hard goat’s cheese.
United by a mutual passion for collaboration and innovation, David Webb from RAVE Coffee and James Rutter from Paxton & Whitfield delved into various avenues to bring this concept to life. Their exploration spanned diverse starting points, ranging from different milk types and cheese styles to a wide array of coffees found at the roastery. Remarkably, their initial attempt yielded a complex, balanced, and intriguing outcome.
Kaldi begins its ageing process at our state-of-the-art maturation rooms in the Cotswolds, a short distance from RAVE HQ in Cirencester. Originating as a young, unrinded goat’s cheese sourced from the Somerset Cheese Company, it embarks on a journey overseen by Quality Manager Jazz Reeves. This involves meticulous brine-washing and coffee coating, before maturing for approximately ten weeks. Kaldi is then ready to be hand-cut, wrapped and ready for your cheeseboards.

The Jones family produce their handmade Lincolnshire Poacher Cheese on their dairy farm situated on the eastern edge of the beautiful Lincolnshire Wolds, where the lush pastures sit on chalky land. They are passionate in their responsibility to manage the farm to impart as little negative impact on the environment as possible. There are a number of renewable projects on the farm including a 275kwh wind turbine, 50kwh of solar panel and a straw pellet boiler for heating the milk using straw they have baled themselves.
