This weather may be up and down but one thing you can be certain of is that if you make this peanut tofu bake you can have dinner on your table in under 30 minutes. AND did we mention it was also packed with protein & fibre?

Oh and it’s really tasty. Obviously.

1 block firm tofu (pressed & cubed)
1 tin of queen chickpeas
1 red pepper (sliced)
2 carrots (thinly sliced)
1 pack of tomatoes
1 tbsp olive oil

Peanut sauce:
2tbsp smooth peanut butter
1tbsp soy sauce
1tbsp lime juice
1tsp honey

Method
Preheat oven to 200°C. Toss the tofu and vegetables with olive oil and a pinch of salt and spread on a baking tray. Drizzle over your peanut butter sauce. Bake for 20–25 minutes, shaking halfway, until the tofu is golden

Top with coriander and chilli oil if you fancy.

SATAY-DAYS - ep.2 & this week we’re bringing you a speedy weeknight udon number packed with a ton of nutty goodness and the dark horse of our PB range.

Ingredients
For the sauce
2tbsp dark roast PB
2tbsp soy sauce
1tbsp sesame oil
1tbsp brown sugar
Half a tsp ginger paste
Half a tsp garlic paste
Chilli flakes
Juice of half a lime
Water to loosen

For the udon
x2 packs of udon noodles
1 red pepper, chopped
3 carrots, chopped finely
1 bag of pak Choi
Bunch of spring onion, diced

Method
Combine your sauce ingredients until fully mixed and set to one side.

Fry some oil in a wok, then add in your veggies and stir fry for 3 minutes until slightly tender. Add in your udon followed by the sauce and stir to combine.

Finish with spring onions and chilli oil.

After thousands of votes, contentious comments & a long time taken to manually tally up all the names, our squirrel is no longer anonymous. Obviously we had to mark this occasion with an official ceremony. So, please say hello to Cyril, the official Pip & Nut squirrel.

if you’re feeling like you need some sunshine to brighten up this cloudy September (!?) day try smacking a cucumber with a rolling pin, its great. & served with creamy satay chickpeas make it even great-er?

Ingredients

For the chickpea satay
1 tbsp vegetable oil
1 garlic clove, minced
1 tsp fresh ginger, grated
1 x 400g tin chickpeas, drained and rinsed
3 tbsp smooth peanut butter
1 tbsp soy sauce
1 tbsp honey
100ml coconut milk
Splash of water (to loosen if needed)

For the smacked cucumber salad
1 large cucumber
1 tsp salt
1 garlic clove, finely chopped
1 tbsp rice vinegar
1 tsp sugar
1 tbsp soy sauce
1 tsp sesame oil
1 tsp chilli oi
1 tbsp sesame seeds

Method

Place the cucumber on a chopping board and gently smash it using a rolling pin or the side of a knife until it cracks open. Tear into bite-sized chunks. Sprinkle with salt and leave for 5-10 minutes to draw out moisture. Mix with the rest of the smacked cucumber salad ingredients. Sprinkle with sesame seeds and set aside.

Heat some oil in a frying pan over medium heat. Add garlic and ginger and cook for 1 minute until fragrant. Add chickpeas and fry for 3-4 minutes until slightly golden. Stir in the peanut butter, soy sauce, lime juice, honey and coconut milk. Simmer for 10 minutes until thick and creamy. Add a splash of water if it gets too thick.

Spoon the chickpea satay onto a large plate or shallow bowl. Pile the smacked cucumber salad on top.

SATAY-DAYS Week 1: Chicken Satay.

As if we’d start anywhere else.

Ingredients
For the satay sauce
3tbsp crunchy peanut butter
2tbsp soy sauce
Juice of half a lime
1tbsp sugar
1 clove of garlic, grated
1 thumb sized piece of ginger, grated
1 tin of coconut milk

For the chicken
4 chickem thighs, chopped into chunks

Method
Add all of your satay sauce ingredients into a bowl and stir until combined. Remove around 3tbsp of sauce and place in a small bowl for later. Chop your chicken into chunks then add into the satay sauce and leave for around an 2 hours (or overnight if possible). Once marinated, skewer and place under the grill on a medium heat until the chicken is cooked through. To avoid the skewers burning soak them in water for 30 minutes before using.

Serve with rice, the extra satay sauce and coriander.
