Is today's bake the best I've ever done? Possibly not, but its flippin' solid considering my tin can shipping container bakery was over 30 degrees all day, you could hear the fridge groaning from the end of the drive and my head hurt. Off delivering soon, then back to prep for tomorrow, with all my bits crossed it goes OK again 🤞🤞🤞

We have a bread drawer instead of a bread bin/box. Maybe that's weird, I dunno. Refill whatever/wherever you store yours...

M.A.R.K.E.T D.A.Y

This is a large 70% Wholemeal Sourdough tin loaf enjoying the morning sunshine. It has 30% white flour just to lighten it a little, and Rye Flakes and Pumpkin Seeds steeped in boiling water and folded through the mix. Finished with more chopped Rye Flakes and Pumpkin Seeds for a satisfying crust. It's just a really good everyday loaf. I try not to get too jazzy with inclusions, I want the bread to stand up for itself. All Organic flour from and available today from 9am.

P.R.I.C.E U.P.D.A.T.E

Regrettably rising costs mean from this week onwards loaf prices will be increasing by 30p. I've tried hard to absorb these increases, but it feels unsustainable. Prices have been the same since I began Dick's over 4 years ago but as demand has increased, my profits haven’t grown with it. Essentially a basic product of 3 main ingredients, there are many costs which you may not have thought about. Flour prices have increased since I started, but this really is the tip of the iceberg. Business insurance, fuel to bring the product to you, electricity to run the ovens, mixers and fridge, dried fruit and seed prices, accounting software etc etc have all increased.

I get lots of lovely comments about the bread, and hopefully the joy it brings still represents good value. I never started this to earn vast quantities of cash, but it feels a little out of balance.

The big tunnel 🤯. It's been a job to pull it back under control. Autumn was chaotic with poorly children, being poorly myself, sneaking in extra hours running for silly long races and trying to eek out as many tomatoes. As such I got way behind transplanting salad crops. In a rush I took the tiller in for the first time, and before long this proved to be a costly mistake. W**d seeds got stirred up and the tunnel became a sea of chick w**d. I ostrached. Ignored. Turned my back. Eventually I had to face it, hand w**ding between small smothered salad plants, then prepping mypex, reinstalling the drip lines, digging up and replanting salad and garlic. I crossed my fingers and hoped they'd take. Now it's filling gaps with spring sown plants and trying to catch up. Lessons learnt, and hopefully more manageable moving forward. Need to woodchip the paths and clean the outside of the tunnel. Then start on the smaller two tunnels. All in all, a bit delayed this year.

This is what my head looks like in the bakery every time it's tomorrow and the forecast is a bit spicy. Do I prep 10 or 110 loaves? Will anyone turn up? Reduce numbers but risk disappointing people or bake it and they will come? See you tomorrow, might have to glue my hat on 💨💨💨💨

Not much garden on here lately. Early days of Dick's it was a market garden, with a bakery to help prop things up. Things have flipped somewhat, and less time means more and more w**ds. Been prepping some landscape fabric today with a homemade jig/sled to try and make things more manageable. Slow'ish work, but hopefully speed things along moving forward. 🤞🤷
