🥄 Pistachio, Hazelnut & Pecan Cheesecake
This baked beauty combines pistachios, pecans and hazelnuts for a dessert that’s smooth, crunchy and packed with flavour. 🍰
Ingredients:
Base:
200g digestive biscuits
100g unsalted butter, melted
50g pecans, finely chopped
Filling:
600g full-fat cream cheese
250g golden caster sugar
1 tbsp corn flour
3 large eggs
150ml soured cream
1 tsp vanilla extract
40g pistachio kernels, roughly chopped
40g hazelnuts, lightly chopped
Topping:
150ml double cream
1 tbsp icing sugar
1 tsp vanilla extract
A small handful of chopped pistachios, pecans & hazelnuts for garnish
🧑🍳 Method:
1. Prep the base: Blitz the digestives and pecans into crumbs. Mix with melted butter and press into a lined springform tin. Chill for 30 mins.
2. Make the filling: Beat the cream cheese, sugar, and corn flour until smooth. Add eggs, soured cream, vanilla, and stir in pistachios and hazelnuts.
3. Bake: Pour over the base and bake at 140°C fan for 50–60 mins until just set. Cool completely, then chill overnight.
Top it off: Whip the cream with icing sugar and vanilla, spread over the cheesecake, and sprinkle with your mixed nut garnish. ✨
