Owners Nick Ball and Jacob Sykes returned to the Ball’s family farm in Leicestershire to start the poultry farming business after living in ‘Peck’em’, London – as a fashion designer and property developer respectively. Nick and Jacob’s keen interest in good food meant their aim was to produce something a bit different – a bird they were both happy to say was of the highest quality, of excellent flavour and succulence, and raised using compassion and artisan farming standards. The traditional French breed chickens are slow-reared to full maturity, (to 81 days), with access to mobile sheds during the daytime when bad weather occurs and overnight for protection from foxes. They are fed an additive-free ethically sourced diet with full access to wild flower pasture and hedgerows, roaming freely, scratching around in the clover fields and at the bottom of trees and hedges. Our Fosse Meadows chicken was positioned No. 7 in The Observer Food Monthly ‘6th Annual OFM 50′ - Everything we love in the world of food right now’. We also won a Good Housekeeping award in 2015, have numerous recommendations from chefs and food writers such as Diana Henry and Thomasina Miers, and came top in a blind taste test by a Michelin starred chef. We are also recommended by Henrietta Green's 'Food Lovers Britain' and are proud have been awarded The Guild of Fine Food, Great Taste Award stars for our Fosse chicken, Christmas turkey, free-range duck, homemade Chicken Bone Broth and Picnic Pie, as well as a fantastic 3 star award for our Cockerel!

Time matters.

Not just for flavour, but for the development of the bird itself.

As Nick explains in this clip, Campylobacter is naturally present in poultry. One of the benefits of giving birds more time is that, as they mature, they become better able to resist and reduce its prevalence.

At Fosse Meadows, our birds are reared for a minimum of 81 days, allowing them to develop naturally, move freely and reach genuine maturity.

From our perspective, there is a direct connection between quality of life, length of life and the quality of the chicken on the plate.

National BBQ Week, approached slightly differently.

This summer we’re teaming up with the legend that is BBQ to explore more creative ways to cook outdoors using Fosse Meadows chicken.

First up:
The Sunday Roast Chicken Burger.

A full Sunday roast rebuilt for live fire cooking.

Using our slow-grown 81 Day Chicken, the recipe combines roast chicken, crispy potatoes, Yorkshire puddings, gravy, bread sauce and cabbage inside a brioche bun.

Cook the chicken low and slow away from direct flames with the lid closed, allowing the BBQ to work like an outdoor oven. Roast the potatoes and veg in trays alongside the chicken over the fire, building smoke, crispness and proper roast flavour throughout.

For a 2kg bird, allow roughly 90 minutes cooking time until the core temperature reaches 72°C, then rest well before carving.

Build with roast veg, Yorkshire pudding and plenty of gravy.
