🌍🔪 BUTCHERY WITHOUT BORDERS — UK 🇬🇧 x AUSTRALIA 🇦🇺

Something pretty cool has been happening behind the scenes at H Davidson Butchers...

Over the last few months I've been chatting with Karnivor Butchery, an independent butcher shop over in Lennox Head, Australia.

It started simply — comparing the butchery trade in the UK and Australia, talking about products that are popular in each country, different techniques and where we think the industry is heading.

But those conversations have turned into us actually helping each other develop new products from opposite sides of the world.

🇦🇺 They've been sharing their knowledge, recipes and methods with me — particularly around producing sausages and burgers without the fillers and rusk traditionally used in many UK recipes.

It's a completely different approach to some of the products we make here and something I'm really looking forward to experimenting with at H Davidson Butchers.

🇬🇧 In return, we've been helping them with something that's become a big part of our own counter...

Truffles.

We've sent a System.B TOD Truffle Press all the way from the UK to Australia so they can begin developing their own range of filled meat truffles.

It's quite mad when you think about it.

Two independent butcher shops roughly 10,000 miles apart, sharing recipes, techniques, ideas and even equipment — all because we both want to keep developing the trade and making better products.

There's plenty we can learn from how butchers operate in other countries, and hopefully there's a little bit we can send the other way too.

We're already working on some of the ideas that have come from these conversations, so you may well see some Australian-inspired products appearing on our counter soon... 👀

And we'll definitely be watching to see what Karnivor Butchery creates with their new truffle press! 🇦🇺🔪
