The Coton Foundry Smokehouse Bespoke Hot & Cold Smoked Meat, Fish and Cheese Whilst living in Canada in the mid nineties, Roger Sanderson discovered the art of traditional hot food smoking.

Buying his first water smoker in 1998 and working in relative isolation, he set about gathering the skills needed to produce meats, fish and veg infused with the subtleties of woodsmoke produced by oak, apple, cherry, plum, alder and of course, maple. Constructing his own smokehouse in 2011 and equipping it conform with Environmental Health and Food Hygiene regulations, Roger resurrected an old fa

mily business name and formed The Coton Foundry Smokehouse. He can now offer commercially, hot smoked Beef, Pork, Ribs, Poultry, Fish, Garlic and other Vegetables as well as cold smoked Cheeses. All food is smoked to order and requires 48 hours notice. Please contact Roger with your requirements.

I was gifted two beautiful jars by The Coton Foundry Smokehouse , one smoked horseradish and one smoked Dijon.

Decided to test it out on a burger (of course); A fairly simple burger, with just cheese, lettuce and pickles and of course a big spoon of sauce.

First thing that cut through was that beautiful smoked hickory flavour, giving the burger a BBQ style flavour, then came the rich creaminess and spicy horseradish taste, though not overpowering or too spicy. I definitely recommend it, it would also go great with oily fish or any type of beef.
