Smoky Jo's Food Smoking Courses Welcome to Smoky Jo's - we are all about smoking your own food at home.

We run one and two day food smoking courses where people can learn how to both hot and cold smoke food. You will learn how to smoke differnt foods - from chicken, scallops and garlic to almonds olives and salmon. On a Smoky Jo's course you will learn how to make your own recipe sausages to smoke and weyou will also catch your own fish to smoke!

Oh my Goodness Guys - look what I have got!!
I was chatting to our friends at ProQ Smokers and they have excelled themselves again and last year brought out a metal version of the fabulous Eco Smoker. This is a perfect cold smoker. It is compact, robust, efficient and just perfectly designed - I love it!

I have to say that I still love the Eco Smoker - as a very lightweight, portable eco option - but this new smoking cabinet is much the same size; a bit more sturdy but it is also lightweight with plenty of room inside. I cannot wait to fire it up.

I suppose I should say that this smoker may last you longer but I have been smoking in the Eco Smoker for 5 years and it is only just on its last legs. And anyway those who know me will understand when I say a girl can never have too many smokers!!

I am back doing talks on smoking (and other things) and this little smoker will be coming with me! Thanks Pro Q - I am thrilled!

If anyone who has visited us at Castle Court over the years may be interested to know that when we put the house on the market last summer the BBC 'Escape to the Country' programme picked it up for their 'clients' and came and filmed there. The clients didn't go for it but the programme was aired today and is on iPlayer if anyone is interested!

Here is our latest surprise -Smoked carrots! So simple - just give them a scrub and pop them in a cold smoker for 6-8 hours. They are so delicious. Grated in salad or coleslaw, steamed with a roast, pureed...... Here we are cold smoking some carrots and butter - and a big bowl of curried celeriac soup with chunky caramelised smoked carrots. So Yummy!

For those of you who visited us at our lovely home - Castle Court - for a food smoking course........ It has just gone on the market as we hope to downsize.

Thanks to Chris Mercer who wrote to us to tell us of the demise of his smoker - Sid - who sadly suffered a fatal incident involving scaffolding poles being dropped from a height! RIP Sid!

However his spirit smokes on and here are pics and details of his new smoker - 'Son of Sid'! Looks absolutely great and we are told will be used for pastrami, halloumi, gammon, salmon, sausages and eggs (very popular with the local pub). Thanks Chris and Happy Smoking!

Chris says - The top drawer has two sets of 90 degree brackets at different levels and obviously two grills held in place with small wooden dowels into the bracket holes to stop them sliding about
Base of drawer multi drilled for smoke and edges sealed with hammerite paint
Bottom drawer sealed with multi layer of baking foil sandwiched around an absorbent grill mat
All can be adapted to hot smoke as the brackets are pop riveted on

We have had lots of communication with people who have been smoking their own food during 'lockdown'. I thought I would share this from Steve and Catie .....

"It's been great to have a solitary and delicious hobby - plus we have been able to barter smoked foods for other things. Oak-smoked cashews have been exchanged for eggs and honey from friends,and given as birthday presents"

Brilliant - they have also been have been having fun experimenting with American rubs and sauces such as the most delicious recipe for BBQ Short Rib and Belly Pork Burnt Ends - Fabulous. Thank you Guys!

I love it when we find people smoking food in different ways. Here in Copenhagen at one of the Christmas Markets they are hot smoking sides of salmon over a fire pit. The sides of salmon are clamped onto the inside of boards that are placed at an angle over the flames. Very smoky but delicious!

What luxury item would I take onto the Desert Island? Well my one big downfall is warm fresh bread and butter. What could be better.... well what about smoked bread and smoked butter? Here is a fantastic sourdough loaf baked with smoked flour that Mary and Ian Oliver smoked in their cold smoker - and a couple of pics of my last weekends activity - cold smoking butter in the Pro Q. Happy to be castaway with those two!

Just been on an amazing bread making course with the fabulous Ivy Cottage Bakery. Learnt lots of new things through their excellent teaching and passion for bread. Off to the smoker to cold smoke flour for my next batch of sourdough. Oh, and there are few things better than cheese scones baked with smoked flour!
