We have been building up our herd of prestigious Highland cows over the last few years at our farm, Carolina, situated on the southern edge of the Lake District covering 75 acres of rich pastureland, where the cows roam free. Al

l of our animals are traditionally reared on a grass-fed diet and are allowed to mature at their natural rate. Once mature our beef is hung for a minimum of 28 days, which is considerably longer than most supermarket beef. We believe the combination of the breed, the pure-grass diet and the hanging process produces some of the tastiest, most tender beef on the market which comes with the added bonus of a number of nutritional and health benefits. By cutting out the middleman we are able to offer our beef at a similar price to the supermarkets' standard beef product and generally 10-15% lower in price than their own premium brand.
