🌬️💛💚 GOOD MORNING & HAPPY TUESDAY!

Well… it’s certainly a bit windy out there this morning but City Boxes is up, moving and ready for another busy day!

The first jobs of the morning are already done and today’s deliveries are heading out 🚚🥕🍎

Then it’s onto a slightly different kind of City Boxes day…

📮 We’re heading out on a leaflet drop around the local area, spreading the word about what we’re doing.

📱 There’s lots of new content to create.

🍲 And after our Autumn Box Challenge, I’ve somehow created another job for myself because there are PLENTY more recipe cards I want to make 😂

It’s amazing how City Boxes has grown into so much more than simply putting fruit and veg into boxes. It’s about helping people eat well, making fresh food easier, reducing waste and hopefully giving people a few new ideas along the way. 💛

So coat on, leaflets in hand and probably hair everywhere in this wind… 😂🌬️

🍂 AUTUMN BOX CHALLENGE — SOUP NIGHT! 🥣

We’re still working our way through our £20 Autumn Veg Box, and this time it was all about using up what was left. 💛💚

Hearty Autumn Vegetable Soup 🥕🥔

Red potatoes, sweet potatoes, carrots, celery, red onion and the last of our butternut squash all went into one big pan with vegetable stock and plenty of black pepper.

Nothing fancy. Nothing complicated. Just proper, warming homemade food — and a brilliant way of making sure those last bits of veg didn’t go to waste.

We didn’t even need a blender 😂 A potato masher gave it a lovely thick, rustic texture, and we served it with warm sourdough bread. 🥖

And honestly… it was soooo good.

That’s another family meal for four from the same Autumn Box — and we’re still not quite finished yet. 👀🍂

Real ingredients. Less waste. Great food.

🍂 AUTUMN BOX CHALLENGE — CURRY NIGHT! 😍🍛

Okay… this one might just be our favourite meal of the challenge so far! ❤️

Tonight we turned more of our £20 Autumn Veg Box into a warming Aubergine, Butternut Squash & Chickpea Coconut Curry — and it was absolutely gorgeous.

🎃 Butternut squash
🍆 Aubergine
🧅 Red onion
🌿 Fresh coriander
🥫 Chickpeas, tomatoes & coconut milk
🌶️ Tandoori masala, cumin & turmeric

We served ours with a little rice and mini naan bread, and honestly… this is one we’ll definitely be making again. 😍

That’s the whole point of our Autumn Box Challenge — taking one box of seasonal vegetables and showing that they don’t have to become boring sides on a plate. With a few cupboard ingredients, they can become completely different family meals throughout the week.

And we’re still not finished with the box yet… 👀🍂

🍂 £20 AUTUMN BOX CHALLENGE — TONIGHT’S TEA 🍂

Okay… this one might be one of our favourites so far 😍

Tonight we’ve turned more of our £20 Autumn Veg Box into a big pan of Creamy Chicken, Mushroom & Courgette Pasta 🍝

We used the leftover chicken from our roast dinner, along with the flat mushrooms and courgette from the Autumn Box, added pasta and made a creamy cheesy sauce.

And honestly… it was absolutely lush. 😂👌

This is exactly what we wanted to show with this challenge. It’s not about making fancy meals or buying loads of extra ingredients — it’s about taking one box of fresh veg, using what you’ve already got, using your leftovers and seeing just how many proper family meals you can get from it.

So far our £20 box has helped us make:

🥧 Mince & Lentil Cottage Pie
🍗 Honey Mustard Chicken Sausages & Roast Autumn Veg
🍽️ Roast Chicken Dinner with homemade giant Yorkshires
🍝 Creamy Chicken, Mushroom & Courgette Pasta

And we’re still not finished with the box yet… 👀🍂
