Tonight’s dinner: Creamy Beany Broccoli Power Bowl 🥦💚
This one’s packed with goodness:
• Tri-colour quinoa base
• Black lentils
• Creamy, cheesy butter beans
• Tender broccoli
• Crispy roasted chickpeas for that perfect crunch
The mix of textures and flavours is honestly so satisfying — the roasted chickpeas really take it to the next level! 🤌
Meals like this are exactly why I love plant-based eating. They’re simple, filling, and such a great way to boost the variety of plants in our diet 🌈 Which is something I’m really focusing on as part of my wellness journey and improving my gut health.

Recent low-UPF dinners 🌿
A snapshot of what I’ve been eating lately while focusing on gut health and overall wellbeing.
I’ve been prioritising variety — adding more beans, lentils, pulses, carbs like sweet potato and quinoa, plus healthy fats like pesto, feta, and guacamole. Each bowl is built around colour, texture, and plant diversity — from kale and salads to sprouts and more.
I’m also being more intentional about rotating foods instead of repeating meals, increasing seeds and plant-based proteins like beans and tofu. It’s all about diversity over perfection.
As a gluten-free vegetarian, I often eat differently from my family, so batch cooking and building my own meals has been key. These are a few dinners I’ve been loving lately — especially with the sunshine back ☀️

Bit slow in posting this, but we enjoy a night away in bath for my hubby’s birthday and we had a wonderful meal I was so impressed with their set up for gluten free customers. I had a whole menu to choose from. Eating out with my family is not always easy and I can end up feeling awkward and feel I limit where we can eat!

However, Bills was amazing 🤩 and the food was delicious we both had incredible dishes and will be visiting our local restaurant with the kids too!

This might be controversial… but cooking from scratch does not have to cost a fortune. 👀

Yes, food prices are up.
Yes, fresh ingredients can feel expensive.
But I’m determined to be more savvy about what we’re eating — without blowing the budget.

So I’ve set myself two little challenges: cook once, eat twice (sometimes three times 😉) and stretch ingredients across multiple meals.

I bought 750g of mince and used it across three dinners for four people:
🥟 Homemade “steak bakes” (demolished in minutes)
🍜 Homemade pot noodles (huge hit — and no weird additives)
🍔 Bacon cheeseburger pasta (an absolute winner in our house)

One pack of mince. Three completely different meals.
And because I spread it out, I didn’t need to buy multiple types of meat for the week.

That’s the key for me right now:
✨ Be creative with how I use meat
✨ Bulk meals out with whole ingredients
✨ Recreate family favourites at home
✨ Cut down on ultra-processed foods
✨ Keep costs down without compromising on health

Cooking from scratch doesn’t have to mean expensive cuts of meat and fancy ingredients. Sometimes it just means stretching what you’ve got and thinking creatively.

Just like we’re reducing UPFs in our food, we’re also becoming more mindful about what we put on our skin. It’s all part of the same journey — and we’re learning as we go 🤍

Here are a few easy swaps I love:
🌿 BYOMA – Affordable, fragrance-free, barrier-supporting skincare that focuses on strengthening your skin rather than stripping it. Such a great low-tox option that actually works.
🧼 Santex Zero & Santex Expert – Smarter cleaning swaps with fewer harsh chemicals and less overpowering fragrance.
💚 Fussy hand wash & body wash – Refillable, gentler formulas, and better for sensitive skin.
🛁 Epsom salt – A simple swap instead of heavily fragranced bath products. Relaxing and back to basics.
🫒 Olive oil soap – Minimal ingredients, naturally moisturising, and great for hands and body.
🌸 Flo period products – Organic, no added fragrance, and a more conscious choice for such a sensitive area.
It’s not about perfection. It’s about reducing harsh chemicals where we can, supporting our skin barrier, lowering irritation, and making small swaps that add up over time.

Not even being dramatic — I knew they’d sell out.

We get through a lot of Bio & Me in this house. My husband’s a big fan of the overnight oats and granola, and I appreciate that there are gluten-free options so I’m not missing out. It just makes breakfast easy.

They’re UPF-free, high in fibre and properly filling — the kind that keeps you going rather than reaching for snacks mid morning. Plus, I like that they help with gut health and adding more plant variety without having to overthink it.

Just a solid, no-fuss cupboard staple. 💚
