As soon as the cheese is in our care, we continue to lovingly age it in our own maturing rooms, developing the flavours, textures, and aromas, to enhance the individual character of each cheese so that our cheese reaches you at the peak of perfection. We are pleased to say that we are good friends with many British cheesemakers and working very closely with them and understanding the challenges they face, allows us to batch select the very best quality cheese. To truly understand what makes our cheese so great, it’s important to regularly meet the maker, visiting the farm to see the quality of the milk, the cheese being made, and where all that wonderful flavour comes from. Before the 1920s, British Isles regional farmhouse cheese was a rich chapter in our heritage being home to 1000s of cheeses. The World Wars had wiped out our cheese and changed the nature of what was left. Over the last 30 years we’ve witnessed a cheese revolution in this green and pleasant land of ours. Since ‘The Great Cheese Renaissance’ of the 1970s we now make over 750 cheeses and once again we’re leading the world in making spectacular farmhouse artisan cheeses and overtaking our French cousins at the World Cheese Awards. A firm and supple alpine-like cheese, bathed in English Sparkling Rosé from Saffron Grange family vineyard to create a cheese full of buttery flavours, with an elegant curtsy of sweet notes. The Duke and Duchess cheeses are handmade using the fresh morning milk. During the summer, the cows graze freely on clover rich pastures and in the winter dine-in on red clover haylage. This home-produced forage, together with the highest standards of welfare, produces top-quality milk which is rich in butterfat and the fundamental ingredient for making world class cheese. 🧀 Stamford’s Cheese of the Week - Cropwell Bishop Shropshire Blue! 🧀

Awarded Supreme Champion at the 2016 British Cheese Awards, Shropshire Blue’s is a refreshing change from other Stilton types. It’s deep-orange body, paired with blue veining make for both a wonderful taste and appearance. We unwrap the cheese and place in a semi-high humidity area increasing the accented piquancy to perfection.

They say great things come in small packages. In this case, it’s vine leaf wrapped packages. Small but mighty. Eve punches well above its size. This diddy goats’ milk cheese is washed in Somerset c***r Brandy which gives a brilliant mix of lemonade freshness paired with a nutty warmth. It’s the perfect addition to a cheeseboard.

🧀 Stamford’s Cheese of the Week - Yoredale! 🧀

A traditional recipe. Some might say a perfect one? Yoredale has an upfront lemon-yoghurty zing, followed by a lovely length and surprising depth. Delightfully complex, earthy, mushroomy and mineral.

Texture-wise it’s a departure too from the usual Wensleydale: smooth, creamy and sticky rather than the crumbly stuff you might know. All of it ties together into something fresh and… well, beautiful.

Another year wrapped at , and this one was bigger than ever with Perry’s sessions on the Tasting Table doubling.

He always poses the same question every time he steps up: “Does everyone know what an affineur is?”

Often he’s met with blank stares.

Which is exactly the point! “For half an hour, I get to walk people through what affinage actually is. How British artisan cheese is made and matured, the people behind it, the history in every wheel. By the end, they’re asking proper questions. They’re hooked! And once you understand what really goes into a true artisan cheese, it’s hard to look at the supermarket stuff the same way again.”

We broke with tradition this week. Our Cheese of the Week shots usually feature a triumphant wedge held aloft - but once we cut into this spruce bark-wrapped cheese and it oozed everywhere, holding it up simply wasn’t an option.

🧀 Stamford’s Cheese of the Week - Killeen! 🧀

Made in the wonderful Galway by the equally wonderful Marion Roeleveld.

Think Gouda, but with a twist - Killeen is made with goats’ milk rather than cows’. The classic Gouda sweetness is still there, but Marion’s 200-strong herd of Saanen goats, grazing on clover-rich pastures, add a gentle floral note and a beautiful fudgy sweetness all of their own.
