Olives Et Al The original British olive artisans … and so much more England proved disappointing, as the search for good quality, basic ingredients was fruitless.

In the early 90s Annie and Giles Henschel embarked on a year-long adventure that would be the inspiration for Olives Et Al. Travelling on motorbikes through the Mediterranean, the Middle East and North Africa, we fell in love with the food we ate along the way. We couldn't gather many souvenirs, being on bikes, but we did gather recipes, hoping to recapture the essence of our experiences by recrea

ting at home the foods we had enjoyed. Particularly frustrating was the lack of olives. Throughout our trip we enjoyed a vast array of delicious olives, but those available at home lacked flavour, texture and aroma. We launched Olives Et Al in 1993 to satisfy our own culinary cravings and to share quality olives with a wider audience. We began producing Marinated Olives using some of our "souvenir" recipes. Over time, the range of products has grown and now includes, Oils and Balsamics, Speciality Olives, Sauces, Snacks, Kiln Roasted Nuts and Dressings and Marinades. We still source all the basic ingredients personally. Our aim is to produce food which tastes and looks just the way it should without using artificial colours, flavourings or preservatives. We begin with the finest ingredients, use original recipes (many handed down through the generations), add a bucket of passion, minimal and elegant packaging to make some of the best food you are ever likely to taste. One thing you can be assured of is that quality and authenticity will never be compromised for the sake of production. Some fathers are happiest tending a barbecue. Others with a spice jar in hand, planning their next feast. Some simply appreciate a good olive and a cold drink at the end of the day.

A good flatbread, still warm from the wood oven, slightly blistered at the edges. Lamb kneaded with the deep warmth of Adana spice blend, pressed onto skewers and cooked over the fire until charred and dripping.

Served with a rough Ezme of tomatoes, garlic, parsley and chilli, and plenty of .uk Crisp Clean Pink Kimchi — sharp, bright and quietly transformative against the richness of the lamb.

A simple collaboration between and .uk , built for long evenings and eating with your hands.

Kofte (makes 2 large)
500g lamb mince
2 tsp Olives Et Al Adana Spice Blend
Knead thoroughly, shape onto flat skewers and grill over the BBQ.

Flatbreads (makes 4)
500g strong bread flour
325g water
1 tsp yeast
1 tsp salt
A little olive oil
Mix, knead and leave to rise before stretching and baking in a hot oven or over fire.

Ezme
1 red onion
3 garlic cloves
4 tomatoes
Olives Et Al Adana Spice Blend
Olives Et Al Harissa
Olives Et Al Jalapeño Hot Sauce
Parsley
Blitz briefly so it keeps a little texture.

Serve everything together with plenty of kimchi..
