April has properly settled into the market, and the season is starting to show its range.
British asparagus is now coming through strong, alongside wild garlic, nettles, and IOW heritage tomatoes bringing those unmistakable early spring flavours.
From Milan, there is plenty to work with. Puntarella, trombetta courgettes, and a full range of chicories continue to bring structure and depth to spring menus.
Across Europe, the selection builds with gariguette strawberries, courgette flowers, and roscoff onions all in good form.
Mushrooms are a real highlight this month, with morels and St George leading the way for a short but special season.
A balanced month. Local produce at its best, supported by strong European lines, and plenty of options for kitchens leaning into spring.
