Tasty but not sugar spikey treats for the dads. A take on millionaire shortbread

Base
100g ground almonds
2 Tbsp maple syrup
1.5 Tbsp ghee
1.5 Tsp vanilla extract
Pinch salt
1/4 Tsp bicarbonate of soda
Caramel
1 cup pitted dates soaked 20 mins in hot water
3 Tbsp almond butter or 3 Tbsp of cashew cream (150g cashews soaked and blitzed)
2 Tbsp ghee
Pinch salt
1 tsp vanilla extract
Topping
Bar of dark choc melted

We used hazelnut and a little salt to finish

20cm x 12cm oven proof dish

We made double this quantity so double the size of this, as seen in picture

Oven on to 160 degrees
Mix all base ingredients and press into a greased and lined tray. Make a few fork holes. Cook for 15 mins.
Blitz the soaked dates and mix with the other caramel notes ingredients and spread over the cooked and cooled base.
Melt the chocolate and spread on top of the caramel and refrigerate.

LINSEED BREAD

Finally wrote down this recipe, been playing around with quantities for a while. It’s really good if you want a low carb/high fibre loaf for toast and also soft enough for sandwiches.

Makes 2 x loaves ( 24x11cm loaf tins)
Cook long and slow. 150 degrees for an hour, possibly a bit longer.

600g Organic Brown linseed ( freshly ground in nutri bullet in 3 batches
100g sunflower seeds
100g pumpkin seeds
1 Tsp Bicarbonate of soda
1 Tsp salt
1 Tbsp caraway seeds
4 Tbsp melted ghee
4 Tbsp ACV
4 whisked eggs
1.5 Tbsp ground psyllium husk
A few Tbsp water

Grind up the linseed, mix with other seeds and bicarbonate and salt. Put 500ml water and the psyllium husk in the nutri bullet, only needs a few seconds before it’s gloop. Add this and the melted ghee and the whisked eggs, extra water and ACV to the dry ingredients and mix really well. Divide into the two bread tins and smooth down.

Pop in the oven.

Once cooled I slice it all and freeze it because there’s only 1 or 2 of us that enjoys this!

Used linseed and psyllium husk. Let us know if you try it ✨

Golly it’s been ages since we’ve been on here, we’ve been soo unbelievably busy! With the autumn colour creeping in and changing light and hungry tummy’s ( and empty fridge) we had a simple dhal this evening. Lots of ghee in it of course 🤤
