Tasty but not sugar spikey treats for the dads. A take on millionaire shortbread
Base
100g ground almonds
2 Tbsp maple syrup
1.5 Tbsp ghee
1.5 Tsp vanilla extract
Pinch salt
1/4 Tsp bicarbonate of soda
Caramel
1 cup pitted dates soaked 20 mins in hot water
3 Tbsp almond butter or 3 Tbsp of cashew cream (150g cashews soaked and blitzed)
2 Tbsp ghee
Pinch salt
1 tsp vanilla extract
Topping
Bar of dark choc melted
We used hazelnut and a little salt to finish
20cm x 12cm oven proof dish
We made double this quantity so double the size of this, as seen in picture
Oven on to 160 degrees
Mix all base ingredients and press into a greased and lined tray. Make a few fork holes. Cook for 15 mins.
Blitz the soaked dates and mix with the other caramel notes ingredients and spread over the cooked and cooled base.
Melt the chocolate and spread on top of the caramel and refrigerate.
