Cornish Yarg is a semi hard cheese wrapped in nettle leaves to add flavour and help it mature. Our Wild Garlic Yarg follows the same recipe but is slightly firmer in texture with a gentle garlicky taste. Cornish Kern, a World Cheese awards Supreme Champion, is a longer maturing hard farmhouse cheese made to a Gouda recipe with Alpine cultures. Our cheeses are available from delis, cheesemongers, selected supermarkets and farm shops. We also sell directly from our dairy.

Preparation has already begun at the dairy, digging out the toastie machines and wrapping minis.

We will be in our usual spot in the Royal Cornwall Food and Farming tent with our four cheeses and delicious toasted cheese sandwiches.

Before it becomes Cornish Yarg, it starts here. Stinging nettles like growing in partial shade, its what gives us big leaves.

Each nettle that you find on your Yarg has been hand picked. We don't cultivate or grow fields of stinging nettles (we've tried!), we find naturally occurring patches throughout Cornwall. Patches of nettles grow from rhizomes (underground roots).

We pick enough nettles between April and June to support the next year's Yarg production. You could say our calendar runs a little differently here!

Delicate and understated, the quince cuts through Yarg's milky, creamy flavours. Not overpowering the cheese on flavour, it's sweet stickiness also complements the crumbly texture of Yarg.
