We’ve put together a simple guide to help you cook it perfectly every time 👌

600g Fillet of Scotch Beef.

Grass fed and dry aged for 30+ days. Perfectly tender and full of flavour!
Serves 2-4 ppl.

Fillet of Beef 600g - Easy Cooking Guide

1. Bring to Room Temp.
• Take out of the fridge 30-60 mins before cooking.
• Pat dry and season generously with salt & pepper.
2. Preheat Oven & Pan
Oven: 200°C / 180°C fan / 400°F
Pan: Get it very hot with a little oil.
3. Sear the Beef.
Sear all sides in the hot pan - 2 mins per side until
browned all over (approx. 6-8 mins total).
4. Roast in the Oven.
• Transfer to oven (or oven-safe pan)
• Roast for 12-15 mins for medium.
(10 mins = rare, 18 mins = well done)
5. Rest.
Rest the beef for 10-15 mins covered loosely with foil.

Serve with triple cooked beef dripping chips, haggis, broccoli, and a simple peppercorn sauce.
