Fresh organic milk from ‘the girls’ (the Friesian cows) at Kirkham Farm is taken to the Creamery each morning, where it is lovingly turned into a new batch of cheese. Made from 100% cows milk, the cheese is traditionally made and is available in three different varieties. The Weavers have been farming in the Cotswolds for the past three generations, and in the South West of England since before 15
70. We proudly follow a traditional method of organic farming, and place great store in caring for the land and animal welfare. Our closed organic herd enjoy a forage-based diet, and their milk production is not forced. When we set out to produce our award-winning cheese we wanted it to reflect its place of origin, and we hope that the creamy, fresh taste of our organic Brie range achieves this. Farming organically in such a beautiful location as the Cotswolds is a wonderful challenge. Milk has been produced at Kirkham Farm for longer than anyone cares to remember – our farm is ideally suited for growing grass, with low-lying river meadows that have never been intensively farmed. All our Friesian cows feed on grasses grown organically for them here at the farm. We’re very proud of our ’girls’ who work hard everyday to provide milk for the cheese. Every morning the milk travels just five metres from the milking shed to the Creamery, where our expert cheesemakers turn it into a delicious range of artisan products. We hope you enjoy tasting our cheeses as much as we enjoy making them!
