An easy roast peppers recipe that is perfect as an antipasto or a light lunch.

Simply roast a halved tomato snuggled inside a halved pepper and topped with salty anchovies and fresh basil to finish.

Ingredients
8-12 ripe plum tomatoes
4 red peppers, stalks left on (for decoration), cut lengthways in half, seeds removed
4 garlic cloves, sliced
5-6 tbsp extra virgin olive oil
salt and freshly ground black pepper
8 large canned anchovies, cut in half lengthways
small handful fresh basil

Method
Preheat the oven to 190C/375F/Gas 5.
Pour boiling water over the plum tomatoes, leave for 10 seconds, carefully remove from the water and refresh in a bowl of cold water. Peel off the tomato skins.
Place the halved peppers into an ovenproof dish (preferably one that will be nice enough to present later), cut-side up.
Place the garlic inside the peppers and then fit the tomatoes inside too, pushing them gently into the space. Add a small pinch of salt and a grinding of freshly ground black pepper. Spoon over the olive oil and then place into the oven. Bake for about 45 minutes to one hour, turning the heat down a little if you notice any excessive scorching of the peppers.
Once they are nicely softened and have slightly collapsed, remove the peppers from the oven. Criss-cross each pepper half with an anchovy, baste with the oily juices and allow to cool to room temperature.
Top with basil leaves and serve.

How about a shortcut for the perfect Cranberry sauce for your Christmas dinner?

“Try this Christmas time saver – pick up a good jar of ready-made cranberry sauce and pimp it up with buttery apples and toasted cinnamon. It takes no time at all but delivers massive flavour! ”

Cheat's cranberry sauce

Ingredients
1 eating apple
1 k**b of unsalted butter
1 fresh bay leaf , optional
1 cinnamon stick , or 1 pinch of ground cinnamon
1 x 250g jar of cranberry sauce such as Mrs Darlington's

Method
Peel, core and chop the apple into 1cm cubes.
Place a pan on a medium heat with the butter, cinnamon and bay (if using). Cook for just 30 to 40 seconds, or until the cinnamon starts to catch and burn – this will bring out all those lovely, toasty flavours.
Stir in the apple and a swig of water, shake well to coat in the butter and leave to soften for a couple of minutes.
Pour in the cranberry sauce and warm through, letting all the flavours mingle, then pour into a bowl and serve.

This impressive charcuterie board is super easy to make.
Simply make up lots of cocktail sticks with your favourite ingredients and arrange around a bowl of your chosen chutney to make a festive wreath shape. Perfect for parties.

Christmas Charcuterie Board

Ingredients
400–450g hard cheese of your choice (such as Shropshire blue and Wensleydale with cranberries), cut into 2cm cubes
260g mini mozzarella balls
160g artichoke hearts
75g cornichons
200g cherry tomatoes
180g black and green olives
180g cured meat or salami
200ml chutney of your choice

To serve
rosemary sprigs
crackers, crostini or baguette slices

Method
Divide the ingredients between 30-or-so cocktail sticks, alternating between cheese cubes and mozzarella balls, artichoke pieces, cornichons, tomatoes, olives and cured meat.

Spoon the chutney into a small ramekin and set in the middle of a large serving plate. Neatly place all the prepared appetisers around the centre ramekin to form a circular wreath shape.

Add small rosemary sprigs in between the appetisers to decorate. Serve alongside crackers, crostini or baguette slices.

Try something different with brussels sprouts at Christmas and serve them shredded with a gentle buttery garlic flavour and pair with your favourite festive main

Christmas

Shredded Sprouts
Ingredients
500g brussels sprouts
2 tbsp butter
2 garlic cloves, crushed or finely grated

Method
STEP 1
Shred the sprouts as finely as you can, and set aside. Melt the butter in a large frying pan or wok until sizzling, then toast ½ tsp freshly cracked black pepper for 1 min. Add the garlic and sizzle for 1 min more.
STEP 2
Turn up the heat and tip all the sprouts into the pan with a generous pinch of salt and a little more pepper, if you like. Stir-fry for about 5 mins. Cook until the sprouts have wilted and are starting to char, then serve straightaway or leave to cool and reheat in the microwave later.

A delicious that could be a perfect Christmas gift too!

Apple butters are lower in sugar than traditional jams. Once opened, they need to be kept in the fridge.

Cooking the apples in cider brings a delightful sparkle to the butter, the flavour of which will vary depending on the type of cider used (pick one you enjoy drinking)

Apple Cider Butter

Ingredients
1kg cooking apples, no need to peel or core
500ml cider
400–500g granulated sugar
½ tsp ground cloves
½ tsp ground cinnamon

Method
Rinse and roughly chop the apples into chunks. Place in a large saucepan with the cider and cook gently until soft and fluffy. Remove from the heat.

Push the apple mixture through a large sieve into a bowl. Weigh the fruit purée and place in a clean saucepan, adding 400–450g sugar to 1 litre fruit purée. Add the cloves and cinnamon. Slowly bring to the boil over a low heat and stir until the sugar has dissolved. Increase the heat for 10–15 minutes, stirring frequently until the mixture begins to thicken.

Remove from the heat and pour into sterilised jars. Seal immediately with the lids. Keep in the fridge once opened and use within 3–4 weeks.

Recipe Tips

Apple butter is amazingly versatile. It is delicious spread on hot toast or crumpets and is equally scrumptious spooned into porridge, muesli or rice pudding. It can also be enjoyed with cheese or a plate of charcuterie.

A variation on this recipe would be to replace the cider with 100ml/3½fl oz elderflower cordial mixed with 400ml water.

Due to the lower sugar content, it is best to pot the butter into fairly small jars.
