With Rhubarb season in full swing, Iโ€™m putting this to the floor:
Is Rhubarb a Fruit or a Vegetable?

Matty (the Boss) says itโ€™s technically a Vegetable (a stem, specifically!), but I'd never dream of putting it in a Sunday roastโ€”it belongs in a crumble with loads of custard. ๐Ÿฅง Like your nan use to make ๐Ÿ’“ So I am team Fruit!

Morning my lovelies ๐Ÿฅฐ

Here's one for the weekend - Lazy Sunday Morning Breakfast/Brunch

Malabar Hill eggs with tomato chutney

Ingredients for the Potatoes
Olive oil, plus extra for greasing
1kg Maris Piper potatoes, washed but unpeeled
Fine sea salt
1 Onion, peeled and very finely sliced
1 tsp ground Cumin
ยฝ tsp ground Turmeric
4 Farm fresh eggs
Fresh Coriander leaves, optional

Ingredients for the Chutney
350g ripe tomatoes, finely chopped
1 Lime, juiced to get 1 tbsp
1 tsp Chipotle or Chili flakes, ground in a mortar
3 Garlic cloves, peeled and minced
ยพ tsp fine salt
1 tbsp Olive oil

Method
Step 1 - Heat the oven to 200C (180C fan)/390F/gas 6. Line an oven tray with baking paper and grease it with a little Olive oil.
Step 2 - First, make the chutney: put all the ingredients in a serving bowl, mix really well and put to one side.
Step 3 - Grate the potatoes in a food processor, put them in a large bowl with a teaspoon of salt, then mix with your hands and leave to steep for five minutes.
Step 4 - Put the potatoes in a clean, thin tea towel, scoop together the corners, then wring the towel until you canโ€™t squeeze out any more water. Pop the potatoes back in the bowl, add the onion, cumin, turmeric, four tablespoons of oil and a half-teaspoon of salt, and mix really well with a spoon (your fingers will turn yellow if you use your hands). Tip out on to the lined tray, spread out right to the edges, then pop the tray into the oven for 40 mins.
Step 5 - Remove the tray from the oven and, using the back of a large spoon, make four shallow indentations in the potato mixture, making sure you donโ€™t go as deep as the tray itself or the eggs are likely to stick. Carefully crack an egg into each indent, then return the tray to the hot oven for 10 mins, until the whites are just set and the potatoes are golden and crisp.
Step 6 - Scatter the coriander leaves, if using, over the eggs, along with a little sea salt, then cut into two or four equal pieces, divide between plates and eat straight away with the chutney alongside.

Make the most of fresh, seasonal ingredients.

Cyprus New potatoes slice and turn golden in the pan,
With English asparagus spears, a fresh green span.
Whisked farm eggs pour over, a yellow sea,
Bake it to golden, as quick as can be.
A spring-time bite, warm and light,
A simple delight for a sunny bite.

Ingredients - Easy serves 3
200g Cyprus new potatoes - quartered
100g English asparagus - tips
1 tbsp olive oil
1 onion - finely chopped
6 Farm fresh eggs - beaten (Crosslea Farm)
40g cheddar - grated
rocket or mixed leaves, to serve

Method
Step 1 - Heat the grill to high. Put the potatoes in a pan of cold salted water and bring to the boil. Once boiling, cook for 4-5 mins until nearly tender, then add the asparagus for a final 1 min. Drain.
Step 2 - Meanwhile, heat the oil in an ovenproof frying pan and add the onion. Cook for about 8 mins until softened.
Step 3 - Mix the eggs with half the cheese in a jug and season well. Pour over the onion in the pan, then scatter over the asparagus and potatoes. Top with the remaining cheese and put under the grill for 5 mins or until golden and cooked through. Cut into wedges and serve from the pan with salad.
