What do we use to catch our tuna? 🎣

The answer is, it depends what’s working on the day!
That’s where our traceability system comes in… each piece of tuna you buy from us can be traced on our website where you can find out the full details of the each fish as well as where and how it was caught!

Why do we freeze our tuna at -60 degrees...? ❄️ 🐟

For reference your average home freezer would be just -18! Even just holding the -60 piece of tuna requires the right gloves, it's super cold, but for good reason!

It's just a small part of the process that makes our bluefin tuna a premium delicacy 🐟

How great does our new van look... 👀

We're incredibly excited about having our very own temperature controlled van as it means we can get out and about to local markets with our British, delicious, sashimi grade Bluefin Tuna 🐟

We're now proud to be a part of the Hampshire Farmers Market's where you'll be able to chat to us and buy our tuna direct from the team that catches it. 🎣

We’re a small team at Hook To Plate, but every role matters, from the sea to kitchen, each of us carries a big responsibility!

Fewer hands means more care and there's an incredible amount of passion behind everything we all do 🐟

Mark is our skipper with 40+ years of big game fishing experience and a passion for bluefin tuna, we are extremely lucky to have a skipper of Marks calibre at Hook to Plate. Mark is responsible for finding, catching, dispatching and everything in between when it comes to our tuna, including the extremely important Ikejime and shinkei jime processes. With the amount of hours he spends each year at sea dry land is alien to this man!

Curtis is our young, extremely talented angler and crewman, working closely alongside Mark to land these stunning fish. Curtis, like the rest of us
shares a passion for bluefin and all things fishing. If he’s not fishing aboard our boat you can bet he’s somewhere else with a fishing rod in hand. He is a former youth, shore angling world champion after winning in the world championships in Domburg, Holland and is a keen and fast learner.

Lance handles everything shore side, from transport and processing to distribution and sales. If you’ve contacted Hook to Plate, chances are you’ve spoken to him. His passion for bluefin comes from a long standing admiration for Japanese culture and seafood. Lance thinks applying these age old Japanese methods to our British bluefin supply chain is important to our brand identity and unlocking the full potential of this magnificent species. Safe to say he’s an absolute stickler when it comes to quality.

Each one a delight on the taste buds, but for slightly different reasons!

Akami is lean and clean
Chutoro is balanced and buttery
Otoro is rich, marbled, and indulgent

The UK has some of the most tightly regulated tuna fisheries in Europe! 🐟

This season saw only 15 licensed boats, each capped at 3 tonnes per year.

Meanwhile, the rest of Europe operates under a huge combined quota of 25,000 tonnes.

For us, the limit allows us to be selective and precise with our catches, not forgetting the protection it allows bluefin tuna to thrive here in UK waters.
