What an absolutely fantastic day yesterday and thanks to the brilliant organisation of the Cookery Theatre by we were able to deliver our inaugural Cornish Seafood Discussion Panel 😎

Our illustrious local experts gave us the benefit of their knowledge and wisdom and huge thanks must go to Matilda from and Mousehole fishing legend Gus Caslake, for their heartfelt and passionate words in support of a vital and sustainable part of Cornish coastal community heritage 🐟🦞🦀

Thanks too to the two Wills - .jaycock04 and .greeny1 who joined us to share their insights as young Cornish fishermen, passionate about their business 🦀🦞🐙

Wonderful storytelling and a great snapshot of what seafood means to this amazing county 👌🏻

A huge thank you to everyone who came and visited our ‘Net to Plate’ stand at the last week. 😎🎉🙏🏻🐟🦞

Beautiful English summer weather combined with enthusiastic and inquisitive crowds of visitors meant we were virtually non-stop for both days 😅

It meant a huge amount to all our team to be able to represent the heritage fishing industry we have on the Suffolk Coast and to be able to tell our story.

The fishing industry are primarily sustainable food producers, but it’s more than that. They’ve shaped and nutured coastal communities for countless generations and rightly deserve recognition for all they do.

Join me this Summer on Aldeburgh Beach and learn all about preparing our native local shellfish - lobster, crab, oysters and brown shrimps.

Learn too about the ecology of these species and how, why, when and how they’re caught. We’ll talk about seasonality and sustainability and discover why the heritage, culture and tradition of our local fishing communities is SO important for coastal businesses.

First up are lobsters and soon we’ll release some crab and oyster dates for later in the summer.

No experience needed - I’ll give you tuition and each session ends in a glorious beach picnic 🥂eating our creations or you can simply take home with you 🦞

It was an absolute pleasure to be invited to talk to the panel, on this morning’s episode of Kitchen Cabinet with

The subject was brown shrimps and naturally a subject that not only am I passionate about, but a shellfish species I’ve known all my life 🦐

The recording was made in front of a live audience and an exceptional foodie panel featuring and Chef Rob Owen Brown.

We had such a great discussion about how to get the best out of these sweet little sea gems and the panel gave some mouthwatering suggestions for using them in ways other than the traditional potted in clarified butter with mace.

Funnily enough, the first brown shrimps I ever caught as a boy, with a push net at low tide, were literally only 100 yards from the stage where we were recording, on the beach nearby at Felixstowe.

I loved them then and I love them now. One of those lingering food memories that define one’s passion for wild flavours 👌🏻

My favourite way to use them ? It had to be an omelette Arnold Bennet, but made with subtly smoked whiting, lest the flavour of the shrimps, scattered liberally on before grilling, is compromised….

A seaside favourite and one which never fails to impress 🦐🦐🦐🦐

Cracking little Brixham dayboat scallops from for this evening’s supper.

Dear, sweet, nutritious things - not that much bigger than a Queenie and just as flavoursome 👌🏻

Fresh ? You could have easily eaten them raw, but tonight was a seasonal special. Ozonous, and firm, less is more when cooking…..

Just pan-seared, with burnt butter and in the lard of some delicious treacle cured bacon and Aldeburgh sausage, all on a luscious bed of Sweffling wild garlic mash (just the stems and flowers finely chopped) and some griddled new asparagus 🥰

Cod - yes or no ? 🤔🐟

There’s once again a huge amount of confusion surrounding the sustainability of North Atlantic cod following the down grading of its rating to a 5 (must avoid) by for their Good Fish Guide

This message needs clarification, as the issue is complex and the ‘top-down’ one size fits all narrative is not helpful, especially when the media put out overly sensationalist headlines such as ‘ditch the seaside staple’

Yes, undoubtedly there are issues with cod populations, especially with what we call the Southern stock that historically resides in the North Sea, Channel and Celtic Sea. This population is steadily moving North, as sea temperatures increase (basically to follow its cold water loving feed - plankton) and is merging with the more abundant Northern cod populations.

Simply put, because the biomass (volume) of Southern cod is indeed low and under pressure, the overall Total Allowable Catch (TAC) is defined by the lower figure and a 44% reduction in catch has been agreed, which overall, will mean an approach which allows for Maximum Sustainable Yield (MSY)

Now that reduction in catch amounts to approximately 10,000 tons less fish landed for 2026, which is highly significant. However, that still means 14,000 tonnes of cod can still be landed and enter the supply chain.

Today alone in Peterhead 140 boxes of cod were on the market from just two vessels catching mainly saithe (coalfish /coley). Although the skipper is actively trying not to catch cod, because the Northern North sea is what we call a mixed fishery, (multiple species) it’s not that easy to avoid

So DO continue to eat cod, because avoiding it completely is actually anti-sustainability, meaning that fishing communities and their businesses also have to be sustainable. Perhaps just eat it less often and look at alternatives such as haddock or hake for example, but don’t disregard it completely

Here in Suffolk, our inshore boats still occasionally get a run of Spring cod April/May time which although short lived and not a huge volume, is still an important bonus catch for them. To say don’t eat it without considering local or seasonal nuance is wrong.
