🧀 Cheese of the Month 🧀
We blinking love our cheese over here, so seemed only right we feature one each month that we’re particularly partial to.
We’re kicking off with Delilah, made at the Cheese Cellar Dairy in Worcestershire, part of Harvey & Brockless. It’s a triple-cream, crafted from a blend of whole milk and cream, giving it an incredibly high fat content.
The texture is yielding and soft, with a velvety, bloomy rind. The flavour is rich and creamy with a lingering sweetness, the high butterfat content balanced by a subtle tanginess.
The richness of a triple-cream calls for accompaniments that either cut through or complement the fat. Good options include crusty baguette or crackers, fresh fruit (figs, grapes, or pear work especially well), honeycomb, and light cured meats like prosciutto.
When it comes to wine pairings, something sharp and acidic to cut through the fat is a good shout, and Champagne’s bright acidity and lively bubbles do exactly that, while a brioche character in traditional-method sparkling wines adds a toasty complement. Equally, a crisp English sparkling wine would be a fitting patriotic match for this British cheese 🧀
