🐚 CUSTOMER CREATIONS
Lee Cooper is absolutely unstoppable this week, and this one is a stroke of genius!

A Thai green curry variation of moules marinière, served with jasmine rice laced with mango.

Taking a French classic and giving it a Thai twist, that fragrant green curry broth with those beautiful plump mussels, and then that jasmine and mango rice alongside to soak it all up... delicious.

FANCY RECREATING IT? HERE'S HOW:

1. Make your Thai green curry base: Fry green curry paste in a little oil until fragrant, then add coconut milk and a splash of fish sauce. Simmer for 5 mins.
2. Add your Henderson's mussels - cleaned and debearded, cover and steam in the curry broth for 3-4 mins until all shells have opened.
3. Discard any that haven't opened and ladle into bowls generously.
4. For the mango rice: Cook jasmine rice and fold through small cubes of fresh ripe mango just before serving.
5. Finish with fresh coriander and a squeeze of lime.

Henderson’s Fishmongers Pasta Event Sunday 25 October!

Join us for our first ever community pasta event on Sunday 25th October 1pm - 4pm.
Once again we are delighted to be teaming up with local chef Nick Wood of Food Inspirations. This will be a perfect opportunity to mingle with our wonderful community sipping Spritzers whilst Nick cooks.
Nick will also be on hand to answer questions and give tips and at the end of the event, we will provide you with the recipes so you can create at home!
