🔥 CUSTOMER CREATIONS — BBQ SEASON IS HERE!
We are absolutely loving how creative you're all getting on the BBQ this summer and this one from Helen Wray is just gorgeous!

Beautiful gilt head bream with Mediterranean vegetables, all cooked on the BBQ. Simple, summery and absolutely stunning.

Gilt head bream on the BBQ is honestly one of the greatest things you can cook outdoors — that smoky char, the crispy skin, the sweet Mediterranean veg alongside... Helen you've nailed it perfectly!

Yateley Town Council would like to wish Yateley Veteran Dennis Thatcher a very Happy Birthday! Dennis turned 100 on Friday 29th May and there will be a small gathering today at the Royal Oak where we will present Dennis with a surprise! Yateley & Hawley Veterans would also like us to publicise their Veterans Breakfast, which is every 1st Saturday of the month in the Royal Oak.

🐟 LINE-CAUGHT BASS ON THE BBQ 🔥
Just look at this Sea Bass. Simple, stunning, and absolutely delicious!

There's nothing quite like fresh line-caught bass cooked whole on the BBQ - crispy skin, moist inside, and pure restaurant magic!

YOU WILL NEED:
Fresh whole line-caught bass from Henderson's (gutted & scaled)
Lemon (sliced)
Fresh herbs - parsley, dill, thyme
Good olive oil
Sea salt & black pepper
Garlic cloves (optional)

THE METHOD:
PREP (5 mins)
1️⃣ Pat fish dry inside and out with kitchen paper
2️⃣ Score the skin diagonally (helps it cook evenly & gets crispy!)
3️⃣ Season generously inside and out with sea salt & pepper
4️⃣ Stuff cavity with lemon slices, fresh herbs & garlic

ON THE BBQ (12-15 mins):
1️⃣ Get your BBQ nice and hot
2️⃣ Oil the grill grates well (prevents sticking!)
3️⃣ Place fish skin-side down
4️⃣ Drizzle with olive oil
5️⃣ Cook 6-8 mins without moving it (this gets that gorgeous crispy skin!)
6️⃣ Carefully flip, cook another 6-7 mins until cooked through
7️⃣ The flesh should flake easily when tested with a fork

HOW TO TELL IT'S DONE:
✅ Flesh is opaque & flakes easily
✅ Eyes are milky white (yes, really!)
✅ Skin is golden and crispy

SERVE:
Fresh lemon wedges, crusty bread, and a simple salad. That's ALL you need! The fish is the star!

PRO TIPS:
💡 Ask us to scale & gut it for you - saves you a job!
💡 Don't overcook - fresh fish is best when just cooked through
💡 The skin should be crispy, the inside moist
💡 If your fish is large, you can tent it loosely with foil after 5 mins to prevent the skin burning while the inside cooks

We are excited to share our Summer BBQ event coming up at Henderson’s Fishmongers on Sunday 19th July, 12 - 3pm.

We’re delighted to be teaming up once again with local chef Nick Wood of Food Inspirations, bringing together his passion for creative cooking with our love of exceptional fish.

Join us for a relaxed and inspiring afternoon as Nick showcases how to turn beautiful seasonal ingredients into unforgettable summer creations!

Throughout the demo, Nick will guide you step-by-step, sharing expert tips, techniques, and answering your questions, before we all sit down together to enjoy every dish.

Whether you’re looking to sharpen your cooking skills, discover new flavour combinations, or simply enjoy a unique dining experience, this event is not to be missed plus, you’ll leave with all the recipes so you can recreate the dishes at home.

Limited to just 14 guests and priced at £80 per person which includes a “Welcome” glass of Pimm’s or Fruit punch.

· BBQ Sussex squid in olive oil

· Parsley & lemon Charred Focaccia bread

· BBQ Scallops with samphire & hazelnuts

Deborah and Simon have absolutely smashed it — Shetland scallops wrapped in streaky bacon, served with smoked chilli, garlic and parsley butter.

That combination of sweet scallop, smoky crispy bacon and that incredible smoked chilli and garlic butter... we are genuinely drooling!

This is the kind of dish that looks incredibly impressive but lets the quality of the scallops do all the talking. And our scallops are more than up to the job!
