You can harvest ume in their different stages, depending on their usage. Mainly green for making ume boshi, yellow to light red for making jams. Most of the time they are not eaten as fresh fruit because of their acidity and tartness, but these trees gave some lovely fruit that tasted similar to apricots, when they have ripen soft!

Happy New Year 🎊 Traditionally we eat mochi もち for New year's to wish for longevity, good fortune and prosperity. It is normally made by pounding steamed gluteneous rice until smooth and stretchy, similar to fufu. This version is made using rice flour and glutenous rice flour. #もち #海外生活 🇬🇲

Did you know that it takes months to make miso paste? The higher the ratio of koji rice to the soya beans the faster the fermentation and lighter the colour of the miso. We call that 'shiro miso' or white miso. The less koji rice the fermentation takes longer and darker the colour of the miso, and we call this 'aka miso' meaning red miso.
