We harvested our first experimental crop of rice! While the harvest might only be able to feed a small sparrow, her first child, and her husband’s cousin; we learned a lot from the process! We also got loads of super useful straw (they’re so hard to get in HK!). Now we will grow some green manure before the autumn planting! 🌾🌾🌾🌾

The Summer I Turned…Green Manure
Let’s focus on the biology of farming, not chemistry.

The weather in HK has been hostile since June. Many farms sustained terrible losses on top of low yield. Farmers are barely surviving with almost no income while having to pay for weather damages and invest for the Autumn season to catch up on revenue. Instead of using “manmade” fertilisers (even organic ones could upset the natural soil biology), we are growing 10 different types to prep the soil for the Autumn planting. This tells us what works best on our new land. Regenerative farming is the only effective (and delicious!), sustainable way to restore climate. We appreciate every one of our supporters!!! Many of you would be familiar with my “I’LL PICK YIOU UP AT THE MEET UP POINT SIGN” instruction, and realise that this is not a river, but in fact our lower parking area. The video was taken on Tuesday 7/7/2026.

Yes we’ve always had heavy rain. Yes it’s always hot in the summer, but our world is not built to cope with this level of ferocity of climate change. No drainage nor AC system can deal with this. The only way out is for us to live a regenerative lifestyle. Buy from regenerative farms, support small businesses who do the right thing. Be informed. We CAN turn this ship around.

HLLLLLL I love your work and I have bought your book (yes the hardcopy that I can touch and show people!!). I’m sorry to copy/paste your work but when I saw my bees doing the HLLLL (see video), I knew I had to show the world the side by side.

Most flour, even wholemeal ones, don’t contain wheat germ, that is the tastiest and most nutritious part of the wheat plant. Why? Cos wheat germ contains lipids and when left in, flour goes rancid quickly—which means they can’t be produced at a commercial level to pack supermarket shelves!
Out of curiosity, I ordered an ancient strain of whole wheat grains from a small hobby farm in the northeast of China, milled them, and made bread.
The outcome is packed full of flavour, though a little grainy (your gut will thank you in the morning!), has structural integrity, and I think it’s a winner. I can’t go back to pre-milled flour…!

I’m so grateful of the beauty nature gives us. Don’t just look, SEE. Isn’t it a great feeling to be in awe?

We are releasing the names of our buns that come out the oven on 7/4/2026! We have names for 4 of them but what to name the 5th bb? Suggestions are welcome!!!!
