Simply the best foccacia I've ever had, thanks to Pike deli, with every crumb used.

The first meal was straight from the wrapper before dinner, with balsamic vinegar and olive oil. Next morning, we achieved the ellusive 'moonstruck' breakfast perfection, with fabulous free range eggs.

The remainder with some delicious olive tapenade.

Is it really a year ago since we welcomed Minister Heather Humphries to the market?

Thank goodness for West Cork Daffodils. They equipped us with a sunburst of daffodils that brought a smile to the Ministers face.

Today they delivered a posy of daffodils to all the visitors at Bandon Day Care centre.

And we're off!

First up in January are the Baby Leeks, every chefs favourite. Our market gardeners have a beautiful crop in now. Although an allium, baby leeks have a sweet, subtle flavour with a buttery texture.

Use the firsts gifts of the year like asparagus. I'd toss in some melted butter with sea salt and white pepper. Cover and steam for about 10 minutes. They are also great for blanching or chargrilling. Like many delicacies, the less you mess with them, the better.

Anyone who thinks gluten-free means second-rate cake, think again! The Country Market bakers are such talented confectioners. They have experimented and crafted until they created these wonderful gluten-free treats.

Cup Cakes, Apple & Raspberry pies, Apple and mince pies, Almond macaroons, Ginger biscuits. The Christmas cake is very light with marzipan and icing.

In our market gluten free is pride of place in lofty company.
