Now would be as good a time as any to give these guys a shout out! 💥
All About brew proper kombucha. As in, its an ALIVE-inside, RAW, unpasteurised lively beverage. Its a refreshing, lightly funky & tangy drink that's good for your gut. Like, actually good for your gut. (Unlike alot of falsely advertised drinks around now).
And!?! It's MADE IN GALWAY 🙌

In Coyles we have their three kombuchas along with their newer sodas. If you're going to have a cold fizzy drink, why not do good for your gut, your community and the planet?

What am I gunna do?!
It's a time of great change in Coyles. September often is. My two bestest, biggest founding members of the shop are on the move. Clem starts college next week and Laura won't be long after her. Both off on new adventures, which I'm gutted / delighted about 😔/🤗

While these two are irreplaceable, I am looking for some newbies in Coyles.

I need a Laura. A steady hand, on life and lattes, she's an excellent communicator. Shell always say the thing everyone is thinking 😅 She has ample experience in the industry, and while she ran her own business before Coyles, she needed a 'clock in - clock out' gig for a bit while she got back to bigger life goals. Luckily I got more than two years out of her 👏 I need a mature head, someone who occasionally shoulders some of the responsibility with me, someone who maybe has their own stuff going on, but who might like a few shifts in a friendly coffee shop, to stay connected with the world. Are you a Laura? 😆 Are you bleedin' deadly?

I need a Clem too. Bright Young Thing. Living locally all year round. Attending school maybe, or on a year out. Well able for a few busy shifts behind the bar. Coyles, again, could be your place, where you earn a few quid and enjoy the vibe. Are you multi talented and super kind? Do you have a wicked sense of humour? Are you a Clementine Lavelle?

Goes without saying, you gotta love good food and be in to coffee. We can teach you the rest.

The photo above was taken today. The whole team. It was not planned. They just all happened to be around. I think that speaks volumes about Coyles, and I feel very, very lucky these people are part of the story ❤️

One of the cool things about working in food is you are always surrounded by crazy creatives 👏 Many strings... many bows! Singers, songwriters, makers & bakers, they're a talented bunch in Coyles 👌

On Saturday the 12th of September (hopefully the first of many gigs at Coyles) Laura is bringing together two very talented musicians
and Crispy Quill 💥

Come along at 6pm. Its a tenner on the door. There will be some beers and bits.

Took the dog for a quick walk during the World Cup final, just for the bit in between the start and the end, and got thinking...

About the knock-on effect of good vibes. Of people supporting each other. Seeing each other doing good stuff. Pushing boundaries and showing how you can do things better.

What am I on about?

I just feel there's a bit of a groundswell of support for Irish food producers lately. There's Sophie Morris, Kenneth Keaveney, Mick Kelly and more, all talking about real food, highlighting the challenges, educating us all. There are Irish producers like An Garraí Glas getting on with the challenge of producing good food. And there are Irish businesses adding value to that Irish produce by stocking, promoting & using it. Dough Bros did that beautifully this week when they brought out a pizza special using Green Earth Organics' courgettes.

This is why I opened Coyles. To sustain myself and my family, while contributing to the community around us. To prove a commercial business can do both, and be successful. How? By supporting each other.

If you didn't shop with us we wouldn't be here, and we wouldn't be able to support all the brilliant Irish producers we stock.

So. Maybe the Connemara sun's gone to my head. But I'm feelin' it. The support, the positivity, the momentum. Keep it up guys, it's so, so important

Haven't felt like posting much lately, but this is too exciting not to share. Some of you might recall, I've been trying to get a good old-fashioned soda bread in to production. One with really good quality Irish ingredients. Full of fibre, low in gluten.
Very soon, like hopefully next week, we are going to start trial baking for Coyles brown bread.
You'll see above, I have two partners in this crime. Chef / pickler/ forager / grower / mushroom guy Egon Hinze is head baker. And Karen Mannion Forum Connemara is going to rent us the Forum Community Kitchen.

Twelve hours after he got out of the leaba, here is Aonghus delivering his leaves to Coyles.
We did have some of his winter leaves a few weeks ago, but they ran out, and we've been waiting patiently throughout 'the hungry gap' since.
It's a real sign of summer, on the eve of the first of May, to see his green van pull up outside.

An hour away, Aonghus is our nearest commercial grower. Delivering to Clifden is a chunk out of his very busy schedule, so I am grateful to have his produce in Coyles.
Without him, unless you are growing your own, we would not have tasty healthy salad leaves in this town. When you can, support local growers like him 👏

Big news!!! The Dough Bros have landed in Clifden!!!

Well, kind of. Their bases have 😊, and they're really good. I know this because I immediately took some home and tried them out.

I popped in to SuperValu for Mutti's pizza sauce (which comes, conveniently in a small tin), Guastalla Pepperoni Salami, Cabots of Westport basil pesto and some Italian mozzarella.

If I hadn't been in such a rush to get home, I'd have popped down to Connemara Hamper for Gubeen Irish charcuterie and Toonsbridge Irish mozzarella 😋.

But whatever it is you like on your pizzas
Bang your oven right up, throw it all together and cook for only 6 or 7 minutes.

That's it. Pizza night. Sorted.👏👏👏

We'd no complaints here. Apart from the dog. Who got none. Poor Omey ☹️
