It’s a standard - not a guarantee of quality.

A lot depends on how fresh the oil is, how it’s stored, and how it’s produced.

Also, not all high-quality olive oil is intensely bitter or spicy. Those flavours depend on the olive variety and when it’s harvested.

Some of the best oils are bold and peppery, others are smooth and delicate - both can be exceptional.

What matters most is that the oil tastes fresh, balanced, and full of life.

Once you experience that, it’s hard to go back. 🫒💚
