Riordan’s SuperValu is a 3rd generation family run store, having set up shop in the 1920’s in Rathcormac. The move to Fermoy took place in 1965 when the Riordan Family opened up the first ever self-service retail outlet in the area. The first Riordan’s Supermarket, then a VG store, was located on McCurtin Street but after 20 years and 3 expansions they ran out of space, moved to the current locati

on and the Top Hat Dance Hall became a Supermarket. Through the years even though the building has changed the Riordan Family’s values, taking care of their customers, their staff (now standing at over 140) and the community remained constant. The bright, clean, spacious store is known for its friendly, helpful staff and both Customer Service and Value for Money continue to be unbeatable.

Try SuperValu Signature Tastes Wagyu Striploin Steak with Green Rice. 😍🔥

Ingredients

For the Steak:
4 SuperValu Signature Tastes Irish Wagyu Premium Striploin Steak
4 Hen Eggs
Chilli Oil
300g SuperValu Signature Tastes Sprouting Broccoli
2 tbsp SuperValu Signature Tastes Teriyaki Sauce
Salt and pepper

For the Green Rice:
Cooked SuperValu Signature Tastes Basmati Rice
3 SuperValu Eggs
2 tbsp SuperValu Olive Oil
2 tbsp SuperValu Garlic, chopped
3 SuperValu Spring Onions, chopped finely
1 SuperValu Green Chillies, deseeded and chopped
4 tbsp SuperValu Chopped Coriander

Method:
Before cooking, remove the steak from the fridge 30 minutes in advance to allow it to come to room temperature.
Choose a medium-sized heavy-based frying pan and preheat it on the stove until smoking hot.
Lightly oil and season the steaks, then place them into the hot pan.
Cook the steaks for approximately 3 minutes on each side.
Remove the steaks from the heat and place them on a warm plate. Allow them to rest for 4 minutes.
Cooking times guide:
Rare: 2–3 minutes
Medium rare: 4–5 minutes
Medium: 5–6 minutes
Well done: about 10 minutes
Cook the broccoli in the same pan used for the steaks. Toss in a little olive oil and cook in the hot pan for 3 minutes to char. Turn off the heat, then add 60ml of teriyaki sauce.
Fry the eggs sunny side up in a little oil. Finish with chilli oil and a pinch of salt.
For the green rice: scramble-fry the eggs in a smoking hot wok. Once cooked, add all ingredients except the rice and coriander and stir-fry for 2 minutes. Add the cooked rice and cook for a further 3 minutes, then finish with chopped coriander.
