Did you know? The arrival of the now-King Charles in Kilkenny in 2017 marked 110 years since the last time the royal family had visited the Medieval City.

King Edward and Queen Alexandra previously visited Kilkenny City back in 1904 as part of an 3-day state visit to Kilkenny with their daughter, Princess Victoria

Since 2017, Highbank has grown leaps and bounds, our 5th generation farm has welcomed visitors from all over the world to take part in various tours around the place that we get to call home.

We have grown our community, been given the opportunity to share our organic knowledge with people of all ages and showcase the beauty of our single estate products.

It's time for cosy comforts and there's no better drink to start with than a mulled apple juice

Personalise your mulled apple juice with aromatic spices, this easy to prepare drink serves 8 people and only takes 10 minutes!

You will need:
🍎 1l apple juice
🍎Orange peel
🍎1 cinnamon stick
🍎3 cloves
🍎Sugar or honey, to taste

Simmer the apple juice with the strips of orange peel, cinnamon stick and cloves for about 5-10 mins until all the flavours have infused. Sweeten to taste.

We were delighted to open up the morning paper to see a piece about Highbank in The Irish Independent

We recently welcomed Shane King to the orchard to explore the Highbank story, learning why we became organic and why we opened the farm to tourists.

Our award-winning Orchard Syrup happened by accident back in 2008 and is now one of our best sellers, it paved the way for an additional 15 Highbank products to be introduced to our collection

Join Rod in front of the Highbank Farm Shop and learn all about the famine pots that are a reminder of deep history that lives around every corner in our home, here in County Kilkenny

As Rod mentions, the Quakers in Ireland, England and America all donated famine pots to the Irish cause, as did the Sultan of Turkey.

The then Sultan of Turkey sent 1,000 pounds in aid and 5 ships containing provisions.

The arrival of these solid cast iron pots was an attempt to feed 8 million people affected by famine or The Great Hunger, as it is also known.

Celebrating 20 years of Savour Kilkenny!

Our favourite local food festival, Savour Kilkenny, is turning 20 years old this October!

We're been delighted to have been part of this amazing festival over the years and were honoured to have been awarded the first Savour Kilkenny Food Producers of the Year back in 2012

This year, you will find Highbank on the menu at a number of different immersive dining events across the festival weekend, along with an interactive food experience, led by Kilkenny Food Tours.

Set in Sullivan's Taproom, you will find interactive tasting stations offering a relaxed route to discover the rich craft and culinary talent of the region.

Throughout the evening, you will have the opportunity to meet the passionate makers behind Kilkenny’s vibrant food scene while sampling an extraordinary lineup of goodies on Thursday 22nd October
