Finn’s Meats is a traditional family owned butcher located on the main street of Mitchelstown Co. The business is managed by John and his wife Nora with the help of their son Stephen who represents the fourth generation of butcher’s in the Finn family to run a business from this location dating back to 1890. two abattoirs, one abattoir focuses entirely on the slaughter of venison and pig meat and the other concentrates exclusively on beef and lamb. Built in 1992, the venison abattoir is located just outside Mitchelstown and is a fully licensed EU approved premises, making it the only licensed export venison plant in the Republic of Ireland. Almost 100% of their cattle supply are store cattle and so are bought at a very young age typically between 6-12 months. Finn’s then rear and fattenen these livestock through to slaughter, a function which they also take full ownership of in their second abattoir. The emphasis on ‘finishing cattle’ ensures full traceability of their meat supply which is a key requirement among a growing and sophisticated customer base. As John states “We maintain tight control of the animal food chain supply which has a direct impact on the overall taste and quality of our meat. Customers not only expect quality they are demanding it”. John works closely with a local feed supplier to produce natural cattle feed that is GM free providing a truly authentic natural flavour to the meat. John, Nora and Stephen believe that there are additional factors at play that have a significant influence on producing very tender tasting meat. All beef hangs for a minimum of 14-21 days in a chilled environment which has the effect of tenderising the meat. This close attention to the meat tenderising process not only ensures a great tasting product range but is one of the main reasons for attracting and keeping a loyal customer base. The Finn family focus on a core range of traditional products which they differentiate through their own blend of mixed ingredients and varied spices. “What makes our burger so tasty is the unique blend of spices we use, our traditional burgers are one of our best selling products” states Nora, “we also produce a beef and bacon burger, and a range of lamb and chicken kebabs which have proven extremely popular”.
