A mild morning and the air is like a wet sponge.
The garden and meadow are like a green haze of new growth and the snails are on a march.The early bee has not arrived yet and the birds are sheltering.
The wood pigeons in the bushes near the house are loving it and the hawks seek a high blue sky to dance their morning dance.
Country choice has never looked better and we are in full flow of summer production.
Lots of marmalade made yesterday and new Spanish summer wines are all packed up.
We received some 25 year old Spanish balsamic and they are superb and also reasonably priced.Plan a visit to Nenagh and park in Kenyonstreet car park with 3 hours free .
The railway is free all day and it’s very near our Sat. our street Market.

Our summer Spanish wine shipment has arrived in Country Choice and we down tools and have a tasting . We taste some Monastrell and some Tempranillo from two mountain organic farms in Valencia Provence . They are deep rich and clean.
They taste of pure clean nature and the zero chemical added policy of both houses is very evident .
The Rose from Enguera has us all longing for warm sun. The wine is bursting with raspberry’s and soft fruit and would be perfect for a fish supper with some lovable and mint sprinkled new potatoes .
Every body loved the two great grassy green Verdil wines from David Carbonell and the Enguera mountain farms.
The cool autumn winds in these mountains make great crisp clean grassy green wines that are dry with a taste of grassy green fruits.
A superb natural wines called La F**A comes from a great natural Catalan wine grower called Rafa.
It’s a great favourite in the house and everybody welcomes a tasting .
The wines don’t disappoint and we are very confident selling them to our friends and customers .

Wild strawberries in the ditch and wild roses in the hedge are this weeks signs of summer .
Smells and sights that evoke memories of joy.
Country choice is a sea of new local strawberries that really taste of strawberries long ago .
New rose wines on the road to us from the villages around the mountain town of Jumilla in Spain.
All the wines coming from farmers of conscience who deeply care about the goodness of the soil and the sustaining properties of our earth .
Lonely crisp clean and fresh whites without added chemicals or overloads of chemicals.
How many times have you felt so bad after the wines at a summer wedding.its more than likely the effect of chemicals than the juice of a grape!
Anyway if you want seriously delicious wines made by family’s who care about the customer and care about their food production methods then call to us for your wines .
Don’t forget to make some elderflower cordial for your summer suppers .The elderflower is at its best this weekend .

Making a gift for a friends party and what else could I do than a traditional moulder pigs head and ox tongue .This is called collared head and it’s around since early medieval times in Ireland .
It was a great tradition in Mary’s home and we continue making this dish for all our family get together and summer or winter lunches.
We always serve it at home with a flat griddle cake and a chutney of sorts but usually beet root relish.
If you ever want a summer party platter made up I would include this striking mold as a centre piece .
Remember it’s Rose time and I can think of no other glass to have in your hand .
We have served it also at functions with a glass of Con Trass’s Tipperary cider .
Country choice is so well stocked with summer food and new wines that all I can say is come and see for yourself .New flowered and baskets on tne street today compliments of our Council and the place looks great.

Mary ward Country Choice chatting with our fruit grower Con Trass of the Apple farm Cahir here in Tipperary . Con tells us why his strawberry’s are smaller and sweeter than many commercially available crops .Mary who has just finished making a few hundred pots of raspberry jam today tells us about why jam should not gel like glue !
Maybe tomorrow we might make some strawberry shortcake in memory of Helen Ryan Luke our great chef from Cappanuke in Cappamore Rip.
Helen was a legendary maker of many Country Choice classics but her Strawberry shortcakes were part of our heritage of summers years ago here in CC.
A lovely bottle of Granache rose from the South of France would not go astray on a grand fine evening like this .
Drop into Country Choice this weekend for new fresh salads . Buy delicious free range eggs and hard boil a few. Make a simple Mayonaise of parsley aioli and put it with a few slices of our homemade hams .
Take one of our warm sodas ,anoint it with butter and enjoy some fresh pickled beetroot with horseradish sauce . Maybe find a shady picnic table and sit down and eat and listen to the birds .

A soft wet morning and the new growth is hanging from the sky.Thunder in the air . Wild roses smelling sweet and flowers on the blackberry briers or drisoga as we say as gaelige.
Mock orange filling the yard with its powerful scent and elderberry flowers blooming is the soft drizzle.
We will have the first small local strawberries from Con Trass and they will taste soft and sweet.We are back open again so please call in for a coffee or a chat .

We are is summer mode in country today.
Our natural and chemical free wines are stacked to the roof and the counters are full of the best homemade salads all made with ethically farmed ingredients. Delicious healthy raw food with great dressings and flavours .

It’s a time of great newness and bounty . Buckets of herbs in the kitchen and buckets of sweet william and flocks in the shop. Blue Irises with cepals of lapis from the Country market and bags of beet tops with red legs like a moorhen .
The kitchen smells of grating Amalfi lemons and mint .
Two power full aromas that remind us of holidays in Italy .
Tubs of harissa being poured on grilling aubergines and the petals of new dried oregano being spread like holy water at a christening .
Blocks of new feta and goats curd to remind me of times spent in the Levent.
Every scent and aroma has a dept of memory and sentiment behind it.
The sun comes in the window and brings us energy.
The smell of poaching rhubarb with lemon and verbena reminds me big flat trays of thin rhubarb cooked in our Rayburn at home .
A thin salty and sweet butter pastry turning the sides of the tart into an almost jam tart flavour .
We have just got a pallet of Rose and light reds from the canal du Midi and it’s a joy to open the boxes .
We buy all our wines directly from great farmers and we get rewarded by the best and most delicious stock.
Don’t pass thru town with coming in .
Your support of small family employers is most important.
Lots of good and affordable parking in our town with the railway car park always free.
