Paul is a master butcher with over 40 years experience working in all facets of the meat industry and is heavily involved in the development and manufacture of our unique Blair House Farm Charcuterie range of products, all produced from our very own pigs, thus guaranteeing all of our products come direct from Blair House Farm to your plate. Paul is also fully engaged in the breeding and care of all our sows and piglets, which are farrowed in our farrowing shed and our piglets, remain indoors for 6-8 weeks or less if weather allows. They are then weaned from our sows and bred outdoors all year round. Therefore all our pigs are free to roam our lands to root, wallow and run at their leisure with no stress. At Blair House Farm we do not Tail Dock, Teeth Clip or Castrate. Having my own farm, with my own registered bloodline, equals, True Provenance & Heritage with full Traceability along with our own processing facility to produce and sell our unique range of Charcuterie, including, Pork & Bacon allows us to give our customers that essential element of trust that every consumer requires when they buy meat today. The Blair House Farm herd records go back many years but the most important guarantee of traceability is that we are local and you can see for yourself how our pigs are produced. Our pigs are produced in welfare friendly systems. All breeding sows, weaners and finishers live outdoors for much of the year and when they are brought inside they are allowed to run loose in large straw bedded pens. Piglets stay with their mothers for longer and are grown slowly to maturity to produce pork with a traditional taste and flavour. Now TASTE the DIFFERENCE
