Many of you know some of my time is spent working at Gurteen College... well, a few weeks ago we were asked if we could give an organic farm walk for some of the students.

So today we welcomed Gurteen's Caroline O'Keeffe with her class of over 40 degree students, accompanied by special guest, Teagasc's Organic Specialist, Elaine Leavy.

The students are studying for a Degree in Agricultural Science and Sustainsbility, which is co-delivered between TUS Thurles (TUS SU Thurles & Clonmel ) and Gurteen College (Gurteen College) at Level 7 and 8.

Some of the topics we covered included:
- ewe breeds and performance, and what we're aiming for with the breeding plan
- the impact of ewe body condition score, nutrition, colostrum, and hygiene at lambing time on prevention of health problems
- markets for organic produce (lamb, barley and oats)
- the flock health plan, permitted / prohibited treatments, & specific rules and requirements of the organic standard and the meat factories (withdrawal periods, record keeping, traceability, meat sales declarations)
- lambing time set up & equipment
- organic tillage and grass production:..soil fertility, organic matter, rotations, yields and profitability (organic vs non- organic)..grassland species (multi species swards), grass measuring & winter forage crops (aka "catch crops" - which are sheep feed but also an environmental measure to protect soil and water from erosion, runoff and leachate)
- farm infrastructure (roadways, fencing, handling systems, penning, and shed design / requirements), and
- schemes (the organic scheme, sheep improvement scheme, sheep welfare scheme, targetted agricultural modernisation scheme, straw incorporation scheme, and farming for water EIP scheme ('catch crop' measure))

It was a pleasure to host Caroline, Elaine and the students, and we hope they got something from their visit πŸ™‚.

Some of my personal favourite cuts:
⭐️ whole shoulder on the bone. This is quite a big cut of meat - ideal as a table centre piece for a special occasion, like Christmas or Easter. I season it fairly well, add rosemary and garlic, surround it with some root vegetables and stock, and cover it for most of the cooking. Remove the cover at the end and a high heat gives that lovely crispy skin πŸ‘Œ
⭐️ Whole leg on the bone - also a very special verge piece for a special occasion...
⭐️ or, the fillet (upper leg) or leg (lower leg) - or both! - as Steaks - these are very convenient, they cook quickly, and you can take out however many you like depending on how many people you're cooking for.
⭐️ and if you know me well, you know I love batch cooking a Tagine (with diced lamb), so I've "ready meals" in the freezer for the days I don't have time to cook but want to eat something nutritious πŸ‘Œ

If you live on your own, or you're the only person in the house who likes lamb 🫣, just know that we can do your entire order as chops & steaks if you like (with some minced or diced lamb).

Any question, please ask πŸ™

Prices: €150 per half collected, €300 for a whole lamb collected, plus €25 for delivery per box (1 whole or 2 halves, or 1 half per box).

Our new Charollais Ram Lamb EMILIO is happily integrated with the rest of the Big Boys!

Hard to believe he's only a lamb isn't it? He was born in January and is about 10 weeks older than the oldest of our lambs.

The other rams are coming up to 7yrs old (Charollais "JACKSTOWN"), 6yrs old (Rouge "MAD MAX"), 3yrs old (Belclare "KRISTOPHER") and 2yrs old (the other Belclare "LAOCHAILAN"). So EMILIO will eventually replace Jackstown.

We breed our own ewes as well as butchers lambs, and there's a few levels of breeding going on...

1️⃣ our older ewes, mainly homebred Border Leicester X's, are put to the Rouge Ram to add the muscle and milkiness that the Rouge brings... This creates either a female Rouge X to keep, or a nice lean meaty butchers lamb.

2️⃣ The Rouge X females are put to the Belclare rams, and that adds in some Hardiness (because they have hair on their heads!) and they're a prolific breed, meaning females with these genes are likely to have more lambs. So we keep the pick of females of these, our Belclare X's.

3️⃣ the Belclare X females are bred with the Charollais Rams to produce meaty factory / butcher lambs, only (at the moment). Next year we will choose another "Replacement" Ram, for breeding females from our Belclare X's.

All Sheep Ireland €urostar Rated rams are rated based on their qualities for breeding daughters (Replacement Index) and for breeding factory / butcher lambs (Terminal Index) - and this is a huge help when choosing rams for the flock, but of course you really need to see them too and it's always a combination of "what's on paper" and "what you see" for me, and I'm learning more about it all the time.

πŸ’‘ Fun Fact: there is a breed of sheep called Charollais and a breed of cattle called Charolais - the main difference, apart from the wool πŸ˜‰, is the extra "L"! And Yip, they're called that because they're both from around the Charolles region of France.

We have a new terminal Ram! Welcome to Emilio!

It took until after midnight to whittle down the 153 Charollais Lots in the catalogue to these 12, which I went to see this morning in Kilkenny Mart at the Elite €urostar Ram Sale. There were 3 which really stood out to me - of the other two: one sold early (Lot 80) for €1350 (I dropped out of the bidding long before that!), then there was Lot 82, which I got, and near the end of the sale Lot 145 which didn't sell even though it was bid up to €950 - €1000, so all in all, I'm really happy.

Pics of Emilio to follow... watch this space! πŸ‘

I was thinking of getting a new "Replacements" Ram this year (for breeding Replacement ewes), then realised actually it's Terminal I really need (for breeding 'factory' lambs) because our current Charollais "Jackstown" is getting old now, and the two most recently purchased rams on the farm are for breeding Replacement females. So for this year, it's a new Charollais, and he's specifically for breeding with our Belclare X ewes (out of Rouge X females).

I don't know if this is boring to you, or interesting, but it is one part of sheep farming I really enjoy πŸ€·β€β™€οΈ
