Preparing Choucrout which I’ve always thought is originally from Alsace, but it turns out it’s actually from China 2000 years ago made with rice wine. It was exported to Eastern Europe by Genkis Khan. Just like many dishes we are led to believe it’s European. The outcome was delicious.
