A classic Punjabi Chole Bhature recipe made using SOR Kabuli Chana and other quality SOR organic ingredients:

Punjabi Chole (Chickpeas Curry)

Ingredients:

SOR Kabuli Chana – 1 cup (soaked overnight)

Tea bags – 1-2 (optional, for color)

Organic Onion – 2 (finely chopped)

Organic Tomato – 2 (pureed)

Organic Ginger-Garlic Paste – 1 tbsp

Organic Green Chili – 1 (optional)

SOR Organic Cumin Seeds – 1 tsp

SOR Woodpress Groundnut Oil – 2 tbsp

Organic Chole Masala – 2 tsp

SOR Organic Turmeric Powder – ½ tsp

Organic Red Chili Powder – 1 tsp

SOR Pink Rock Salt – as per taste

Water – as needed

Fresh coriander – for garnish

Instructions:

1. Pressure cook soaked SOR Kabuli Chana with tea bags, salt, and 3 cups water for 4-5 whistles. Discard tea bags once cooked.

2. In a kadhai, heat SOR woodpress groundnut oil. Add cumin seeds, let them splutter.

3. Add chopped onions. Sauté till golden brown.

4. Add ginger-garlic paste and cook till raw smell goes.

5. Add tomato puree, all dry spices, and cook till oil separates.

6. Add boiled chana along with the water. Simmer for 15–20 minutes for flavor infusion.

7. Mash a few chanas with the ladle to thicken the curry.

8. Garnish with coriander.

Ingredients:

All-purpose flour (maida) – 2 cups

SOR Organic Suji (semolina) – 2 tbsp

Curd – ½ cup

Baking powder – ½ tsp

SOR Pink Rock Salt – ½ tsp

SOR Organic Brown Sugar,/ SOR Deshi Khandsari – 1 tsp

Water – as needed (warm)

SOR Woodpress Groundnut Oil – for deep frying

Instructions:

1. Mix maida, suji, salt, sugar, baking powder.

2. Add curd and knead with warm water into a soft dough.

3. Cover and rest dough for 2–3 hours.

4. Divide into balls, roll into round puris.

5. Heat oil and deep fry bhature until golden and puffed.

Serve hot Punjabi Chole with fluffy Bhature, sliced onions, and lemon wedges.

Restaurant-Style Dal Fry Using SOR Organic Products

Ingredients:

Main Dal:

1 cup SOR Organic Toor Dal

3 cups water

½ tsp SOR Organic Turmeric Powder

Salt to taste (SOR Pink Rock Salt)

Tadka (Tempering):

2 tbsp SOR Wood Pressed Groundnut Oil / SOR A2 Cow Ghee (for richer taste)

1 tsp cumin seeds (SOR Organic Cumin Seeds)

1 tsp mustard seeds (SOR Organic Musturd Seeds)

1 dried red chili

1 small bay leaf (SOR Organic Bay Leaf)

1 small onion, finely chopped

1 medium tomato, chopped

1 green chili, slit

1 tsp Ginger Garlic Paste

½ tsp Red Chili Powder

½ tsp garam masala

Fresh coriander leaves, chopped

Instructions:

Step 1: Cook the Dal

1. Wash and soak SOR Toor Dal for 20–30 minutes.

2. Pressure cook with 3 cups water, SOR Turmeric Powder, and a pinch of SOR Pink Rock Salt for 3–4 whistles until soft.

3. Mash the cooked dal and keep aside.

Step 2: Prepare the Tadka

1. Heat SOR Groundnut Oil or SOR A2 Cow Ghee in a pan.

2. Add mustard seeds, cumin seeds, dried red chili, and bay leaf. Let them splutter.

3. Add onions and sauté until golden.

4. Add green chili and SOR Ginger Garlic Paste, cook till raw smell disappears.

5. Add tomatoes, cook until soft and mushy.

6. Mix in Red Chili Powder, garam masala, and a little more SOR Pink Rock Salt.

Step 3: Combine & Simmer

1. Pour the mashed dal into the pan.

2. Mix well, add water if needed to adjust consistency.

3. Let it simmer for 5–7 minutes on low flame.

Step 4: Finish with Flavor

1. Garnish with chopped coriander.

2. Optional: Add a spoon of SOR A2 Ghee on top before serving for that rich restaurant touch.
