A celebration isn’t complete without my friend, Damithra’s cake. She runs a home bakery - , and for years I have been ordering only from Dami.
Dami & I went to together way back in 1995, the first batch. So we have known each other for 30 years now.
Today I ordered a pineapple upside down cake from Dami. She bakes eggless and sugar free cakes too, on request. So that works great for us. Been wanting to taste this cake and finally did, today !
I don’t know much about baking, but this was denser than your regular sponge cake. I read up on it and learnt that it’s supposed to be so. The moisture from the pineapple and caramel gives it an almost pudding like consistency at the bottom. Delicious of course. I am not criticising it, I am just saying that the texture is different from your sponge, which I hadn’t known. So you know what to expect if you are ordering this upside down cake.
But truthfully, I think I prefer the airiness of a sponge. Ohh, forgot to mention the eggless, white sugar choco cupcakes that I ordered extra for the kids. Plain choco for daughter and choco mint for son.
