🌾 Foxtail Millet: The Ancient Grain with Modern Magic 🌾

Hey food lovers! Today, we're shining a spotlight on one of our favorites—Foxtail Millet! ✨ This humble grain has been fueling generations with its nutritional power and is now ready to make a comeback in your kitchen. 😋

Foxtail Millet Salad Recipe 🥙

🥄 Ingredients:

1 cup Foxtail Millet
1 cucumber, diced 🥒
1 carrot, grated 🥕
1 bell pepper, chopped 🌶️
1/4 cup dried cranberries 🍇
1/4 cup roasted almonds 🌰
Fresh parsley, chopped 🌿
🥄 For the dressing:

3 tbsp olive oil 🫒
1 tbsp apple cider vinegar 🍎
1 tsp honey 🍯
1 tsp mustard 🌟
Salt & pepper to taste ✨
How to Make:

Cook the Foxtail Millet like you would cook rice. Fluff and let it cool. 🍚
Dice, chop, and grate all your veggies. 🥕🥒
Whisk together the olive oil, vinegar, honey, and mustard for the dressing. 👩‍🍳
Mix the millet, veggies, and dressing in a large bowl. Add almonds and cranberries for a crunchy, sweet twist. 🌰🍇
Garnish with fresh parsley and enjoy! 🌿✨
This salad is perfect for lunch, a snack, or even as a light dinner. It’s quick, easy, and packed with nutrition. 🥗🍽️

Ingredients:
Samai (Little Millet) – 1/2 cup
Moong Dal (Yellow Lentils) – 1/4 cup
Ginger – 1 tsp (finely chopped)
Black Peppercorns – 1 tsp (crushed)
Cumin Seeds – 1 tsp
Cashew Nuts – 8 to 10 (optional)
Ghee – 2 tbsp
Curry Leaves – a few
Turmeric Powder – a pinch
Salt – to taste
Water – 3 cups

Instructions:

Rinse the Samai and Moong Dal thoroughly and set aside.

In a pressure cooker, dry roast the Moong Dal for a minute or two until aromatic, but don’t let it brown.

Add the rinsed Samai, turmeric powder, and 3 cups of water to the cooker. Pressure cook for 3-4 whistles until the millet and dal are soft and mushy.

In a separate pan, heat ghee. Add cumin seeds, crushed peppercorns, cashew nuts (if using), and chopped ginger. Sauté until the cashews turn golden and the spices are fragrant.

Add curry leaves and sauté briefly. Now, pour this seasoning over the cooked millet-dal mixture. Mix everything well.

Add salt and mix. If needed, add a little hot water to get the desired pongal consistency.

Serve hot with coconut chutney or sambar. Enjoy your nutritious Samai Pongal! 🍛

This dish is perfect for a light, wholesome meal.
