PANEER TIKKA
Ingredients:-
1) paneer -250 gm
2) onion- 2 medium sized
3) capsicum (green, yellow, red) - 2 nos
4) tomato- 1 nos
5) ginger garlic paste- 1 tsp
6) hung curd- 200 gm
7) dhaniya powder- 1tsp
8) garam masala- 1 tsp
9) kitchen king- 1 tsp
10) salt
11) kali mirch
12) Lal mirch
13) refined oil/ oil- 1 tbsp

Method->
Ek bowl mai pyaaz ke cubes, capsicum ke cubes, tomato cubes aur paneer ke cubes kaam ke ek bowl mai dale. Hung curd mai ginger garlic paste, dhaniya powder, garam masala,kitchen king, salt, kali mirch, Lal mirch, oil daal ke mix kare. Iss mixture paneer aur sabziyon ke cubes par daalo. Iss ko ek ghante ke liye dhak ke chod dijiye. Ek ghante ke baad isko medium heat pa non- stick pan mai dhai ko dry hone tak pakaye. Halka sa smoky flavour aane de. Agar aapke pass barbecue hai toh aap uspe bhi paneer Tikka bana sakte ho. Upar Upar nimboo daal ke serve kare.

1) Paneer-250 gm
2) Onion-2 nos
3) Tomato-4 nos
4) cashew- 8-10 nos
5) Fresh cream/ malai- 2tbsp
6) Ginger-garlic paste- 2 tsp
7) Jeera-1 tsp
8) Dal chinni- 1 inch piece
9) badi elaichi- 2 piece
10) laung-2 piece
11) Salt
12) Mirch, Haldi
13) Kesar/ red food colour

Method:-
Onion ko mota mota kaat ke halke pani mai 5-7 min ke liye boil karke uske puree banaye. Tomato ki bhi puree bana lijiye. Kaju ko pani/dhoodh mai dip karke uska paste bana lijiye. Paneer ko chote triangle ki shape mai kaat ke side par rakh lijiye. Ab ek pan mai ghee garam kare. Laung, elaichi, dal chini aur jeera ko dardara peas ke ghee mai daale. Usmai ginger-garlic ka paste daale; green chilly aap apni eccha anusaar daal sakte hai. Ismai onion puree daale, jab onion ghee chodne lage to usmai tomato puree daal de; jab masala colour badlne lage toh usmai haldi aur mirchi daale. Ab ismai cream/malai daale. Gas ko sim pe rakhe. Ab ismai kaaju ka paste daale, salt daale agar gravy zyada thick lag rhi hai toh pani daal. Ab kesar ke lacche ya colour daale. Aur aakhir paneer ke tukde daal ke 5-7 min dakh ke band gas pr rakhe. Agar aapki eccha ho toh kasoori methi bhi daal skte ho. Dhaniye aur cream se garnish krke serve karein.

Gajar ka halwa
Ingredients:-
1) 1 kg carrot grated
2) full cream milk 1 L
3) mawa 250gm
4) elaichi powder (optional)
5) sugar 2 tbsp
6) pure ghee 1 tbsp
7) nuts

Method:-
Boil milk in a heavy pan add carrots to it. Cook it on high flam for 20 minutes, now keep it on low flam till the milk dries. Now add mawa to it. Cook. Then add sugar. Cook. Add ghee. Cook. Finally add nuts and elaichi powder. Jab tak halwa ghee na chod ne lag jaye tab tak pkae.

Dahi bhalle
Ingredients-
1) 1 cup urad dhuli daal (soaked for 3 hours)
2) a pinch of hing
3) kaju ke tukde
4) badaam ke tukde
5) sukhi khanjur ke tukde
6) kishmish
7) ginger finely chopped
8) imli ki chutney
9) dhaniye ki chutney
10) curd
11) Oil to fry

Method-->
Hing ka pani dal ke urad daal ko mixi mai grind karo. Rest it for 15 mins. Beat it. Chakle pe polythene bichao uspe daal ka ek peda rakh k haath se thap thapao. Saare dry fruit aur ginger ki katran daalo. Polythene ko upar ki taraf modh kr gujiya ki tarah banao. Haath ko pani laga kr use utha k oil mai daale. Fry it on medium flame until golden brown. After all the bhallas are made add them to hot salted water and leave it for 15 mins. Pani nichod kr Bahar nikale. Bhalle ke upar curd, salt, pepper powder, chutney's daal kr serve kare.

Nariyal ki barfi-->
Ingredients:-
-coconut kaccha (pani nikal ke grate kiya hua)
-milk 1 L
-elaichi powder (a pinch)
-khoya 150 gm
-sugar 2tbsp
-desi ghee 1 tbsp

Method:-
Boil milk. After the milk boils add grated coconut. Cook on medium flame till the milk dries. Now add khoya and cook. Keep stirring it. When it gets a little brownish and when the coconut gets cooked add sugar keep cooking it. Now add ghee. Keep cooking. Now add elaichi powder. Remove from flame. Now spread it on a greased (with ghee) plate and set it in the fridge for one hour.
